Meatloaf with crushed crackers?!


Question: Meatloaf with crushed crackers!?
Has anyone used crushed Saltines in a meatloaf recipe!?
Does it taste ok!? I don't have any bread and don't have time to drive all the way to town!.
I do, however, have crackers!.
Just wondering if anyone has ever used crackers instead of bread crumbs!?

Yes!. Crackers will work just fine!.

Now for the unconventional part:

Heloise hints in the newspaper asked what the craziest kitchen tip that was ever given was!. Well, here is the answer:

To crush crackers into perfect meal for breading or assorted dishes that required equal size cracker meal!. Put the crackers in a 1 gallon Zip top bag!. Place the bag in your driveway and drive over it with a truck!.

I have used this technique for years now and can tell you that a 3/4 ton Ford truck is perfect for this task!.

My neighbors know not to ask anymore why I am driving back and forth a couple of feet at a time in the driveway, they already understand I'm just make dinner :)Www@FoodAQ@Com

FAMILY MEATLOAF

2 lbs ground round
1 cup bread crumbs or crushed saltine crackers
2 eggs
1 cup Parmesan cheese
1 small onion diced
1 clove garlic crushed
1 pkg meatloaf seasoning mix
1/4 tsp ground black pepper
1 small can tomato sauce

Mix ground beef, bread crumbs, eggs, 1/2 cup cheese, onion, garlic, seasoning packet, and black pepper!. Pour tomato sauce over the top and sprinkle with remaining 1/2 cup Parmesan cheese!. Place in a loaf pan and bake at 350°F for 1 1/2 hours on bottom rack of oven!.

Final internal temperature should be 170°F for ground beef!. Ovens vary, so check meatloaf after 1 hour!.

MEATLOAF

2 lbs!. hamburger meat
1 lb!. regular sausage
2 eggs
1/2 tube of crackers
1 bell pepper
1 onion
ketchup
honey
brown sugar

Mix together hamburger and sausage very well!. Add eggs, and crush crackers into fine pieces and mix in!. Add diced onion and bell pepper!. Add enough ketchup to throughly 'wet' all ingredients!. Add 3 tbs!. honey!. Mix all ingredients very well making sure everything is incorporated evenly!.

For topping: Mix Brown Sugar, Ketchup, Mustard and 'Plenty' of honey place over top of loaf!. (I don't measure any of these ingredients, just add to your taste)!.

Cook at 350 for 2 hours!.

Due to the content of sausage you may need to drain off during cooking process!.

Meatloaf with Brown Sugar-Ketchup Glaze
GLAZE
1/2 c Ketchup or chili sauce
4 t Brown sugar
4 tsp Cider vinegar
MEATLOAF
2 tsp Vegetable oil
1 Medium onion,chopped
2 Garlic cloves, minced
2 Large eggs
1 tsp Dried thyme leaves
1 tsp Salt
? tsp Ground black pepper
2 tsp Dijon mustard
2 tsp Worcestershire sauce
? tsp Hot red pepper sauce
? c Milk, buttermilk or low-fat plain yogurt
2 lb Meat mix (50% ground beef; 25% ground pork, 25% ground veal) **when I made this I made 50% gr beef ; 50% sausage/ground pork!.!.**
2/3 cup Crushed saline CRACKERS or quick oatmeal (or 1 1/3 cup fresh bread crumbs)
1/3 cup Minced fresh parsley leaves
8oz thin -sliced bacon (8-12 slices, depending on loaf shape) * Dredge in flour to try to prevent shrinking!.

Preparation
1!. Glaze: mix all ingredients in small bowel; set aside

2!. Meatloaf: Preheat oven to 350°F!. Heat oil in medium skillet!. add onion and garlic, suate until softened, about 5 minutes; set aside to cool!.

3!. Mix eggs with thyme, salt, pepper, mustard, Worcestershire, pepper sauce, and milk or yogurt!. Add egg mixture to meat in a large bowl, along with cracker/bread selection, parsley and cooked onions and garlic; mix with fork until evenly blended and milk mixture does not stick to bowl!. (If mixture does stick, add additional milk, a couple of tablespoons at a time, and continue stirring until mixture stops sticking!.)


4!. Turn meat mixture into a loaf pan (preferably one with a perforated bottom and drip pan)!. Use a fork to pull mixture away from pan sides!. brush mixture with half the glaze, then arrange bacon slices (dredged in flour), crosswise, over loaf, overlapping slightly & tucking only bacon tip ends under loaf!. Bake until bacon is crispy & loaf registers 160 degrees (about 1 hour)!. Brush with remaining glaze and continue to bake until second coat has set, about 15 minutes longer!.

BREAD CRUMB
Substitutes:
cracker crumbs (3/4 cup cracker crumbs = 1 cup bread crumbs)Www@FoodAQ@Com

My meatloaf, which I made up on my own, gets rave reviews!. I don't use either bread crumbs or crushed crackers!.

1 lb ground beef
2 eggs
1/2 can of rotel
1/4 cup chopped white onion
2 tblspoon of white flour
Garlic salt
Fresh Ground Pepper

Preheat oven to 350, combine all ingredients and of course mush up together!. I bake mine in an 8x8 glass dish for a half hour!. Then i remove it, drain the fat, and sprinkle brown sugar (just a bit) on top, then layer ketchup on it!. I put it back in the oven for 10 mintues to turn it into kind of a glaze then take it out and let it cool for 5 minutes or so, the serve!! I have gotten SOOO many compliments on this! Sometimes I add some chopped bell pepper, but that is if I feel like chopping it!. :)Www@FoodAQ@Com

I always use crackers in my meatloaf!. I just crumble them up with my hands!. It will taste just fine!. Just remember if they are crackers with salt to use less salt in your recipe!.Www@FoodAQ@Com

Im sure it will work crush the crackers first!. probably use a little less than you would for bread crumbs they will probably be drierWww@FoodAQ@Com
