Question: ISSUES WITH NIPPLES OF VENUS! Help!?
OK!. I made a couple of truffles just for the experience of it and here are the issues I faced:

1!. The batter took a LONG time to harden, so that I could pipe it!. Therefore, I put it on the stove and heated it and added some more dark chocolate!. It was a disaster!. It burned a little!. It became very bitter!.

2!. When I piped it out, the truffles would not harden, so I put a couple of them in the freezer and they did harden, but as soon as I tried to get the tip coated with white chocolate, they started softening again!.

3!. They tasted too bitter!. How do I make them less bitter without using so much cream!. The more cream I add, the more time they take to harden, so it's sort of paradoxical!.

You probably didn't temper the chocolate right!.!.!.!.

also!.!.!. you have to have a thermometer for tempering chocolate so you don't burn it!.!.!.
