1 lb sirloin or tenderloin, cut into bite size pieces
1 small onion, cut into strips
1 large tomato, cut into strips
1 large hot pepper, seeded and cut into strips
salt
pepper
2 cloves garlic, chopped
1/4 cup dry red wine
2 tablespoon lime juice
1/4 cup chopped cilantro
Place the cut meat in a bowl or dish, and season it with salt, pepper, a little bit of olive oil, lime juice, and chopped garlic!. Let marinate for at least 20 minutes!.
Sauté meat over high heat for a few minutes until meat is no longer pink!. Lower temperature to medium and add first the onion!. Cook, stirring for 1 minute and then stir in the tomatoes and peppers!. Cook until the onions are tender!.

1 clove garlic, chopped
1 tbsp!. vinegar
2 lbs!. potatoes
2 lg!. red onions
6 Italian tomatoes or 2 lg!. firm reg!. tomatoes, cut into fourths
Cut meat into small strips and marinate in cumin, garlic and vinegar for 30 minutes or more!. also add salt and pepper to taste!. Cut potatoes as for French-fries!. French fry the potatoes and keep warm!. Stir-fry the beef in 3 tablespoons oil until tender (may add hot pepper to taste)!. Add onion and cook to crisp, NOT soft and mushy! Add tomatoes and cook just until tender, NOT mushy! Add the French-fried potatoes and toss!. Serve with cooked rice!.
Serves 4-6!. this reciepe is excellent

1 pound beef tri tip, sliced 1/8 to 1/4 inch thick
salt and pepper to taste
1 large onion, sliced into strips
3 large tomatoes, peeled, seeded, and sliced into strips
1 yellow chili pepper (preferably Peruvian aji amarillo)
1/4 cup distilled white vinegar
1 dash soy sauce to taste
2 tablespoons chopped fresh parsley

While the French fries are cooking, heat the oil in a frying pan over medium-high heat!. Season the sliced meat with salt and pepper to taste!. Fry the meat until just cooked, and the juices begin to release!. Remove the meat from the frying pan, then cook the onions, with additional oil if needed, until they are transparent!. Stir in the tomato and aji amarillo; cook until the tomato softens!. Pour in the vinegar and soy sauce, add the French fries, cover, and cook until the beef is done, about 3 minutes!. Season to taste with salt and pepper, and sprinkle with chopped parsley to serve!.
