How do I turn my loaves of bread in to rolls?!
I have an awesome potato bread recipe!. I LOVE it! I make it all the time!. At holidays I make homemade rolls, but not with my recipe!. I would like to use my potato bread recipe!. So how do I bake it and how long to I let it rise!.
Right now it rises twice, first to double in size (30-45 min) and second after I form it (let it rise to top of pan)!.
I bake it for 30 min at 350 or for a thicker crust preheat to 400 then reduce to 300 when bread it put in the oven and then bake for 1 hr!.
What do you think I should change, if anything, to bake rolls!?Www@FoodAQ@Com

make up the rolls the same as you do for your holiday rolls!.Bake the same amount of time at the same temp!. Check for color add or reduce baking time to the color you prefer!.Not knowing the sugar content of your recipe it is hard for me to give you an exact time!. For a more soft and tender crust brush with oil or butter as soon as rolls come out of oven I hope this helps you!. jim bWww@FoodAQ@Com

I have a favorite potato bread recipe that I convert to rolls all the time!. Basically for the 2nd rise, divide the rolls into balls about twice the size of a golf ball and lightly roll in some flour!. I place them in a big cast iron skillet but you can use a regular baking pan cover and let rise till doubled in bulk!. When they rise, they will be touching or almost touching each other which is fine!. Bake as usual like you would for the bread!. The rolls will pull apart and be really good!.
The only thing I would change is not preheating till 400 then going down, I would bake at 350 the whole time!. You don't want them to have too thick of a crust!.Www@FoodAQ@Com

After the first rising, punch the dough down, & make rolls!.
i!.e!. Turn dough out on lightly floured surface!.
Knead dough lightly for 1 minute until smooth!.
Divide into 4 equal portions, then each portion into 6 pieces!.
(this should be enough to make 24 rolls) Roll each into a ball!.
Grease 24 muffin cups, place 1 ball in each cup!.
Cover with waxed paper or plastic wrap, & a tea towel!.
Place in oven with light on & door closed until doubled!.
Bake at 400F for about 15 minutes, or as required!.
Brush tops with butter, let stand 5 minutes, remove to rack!.Www@FoodAQ@Com

If your recipe makes one loaf of bread, it can make 8 sandwich-sized buns, 12 dinner rolls or 24 tiny appetizer-style rolls!. After the first rise, punch it down, form it into the desired shape and quantity and place on a cookie sheet!. Cover with a towel and let rise again for approx 30 minute or until puffy!. baking times can always vary, however it's the same process with rolls as with bread!.

When I make rolls, I bake them for about 20 minutes - generally turning the pan after the first 10!.Www@FoodAQ@Com
