Sometimes butter and *good* oils can be used interchangeably in cooking and baking and sometimes not!. One cannot just use one OR the other!. One must examine why a particular ingredient was specified in the recipe!. For example, if you used all oil instead of butter in a cookie recipe, the cookie would spread all over the pan!. you'd have one flat, wide, crispy cookie!.

The best thing to do is go in moderation with both!. For health reasons (to lower fat and calories) you can sub a portion of butter or oil with fruit purees!. SunSweet makes a product called LighterBake!. Very easy to use and not expensive!.

It depends on what you are cooking!. If it is something you are cooking at a low temperature and want a little more flavour to it, then use butter!. But if it is at a higher temperature, then use an oil!. Butter has a low burning temperature, so you want to avoid using it at high temperatures!. also, butter is mostly liquid, about 80%, so you don't want to use it if you want your food to have a crisp outer shell!.Www@FoodAQ@Com

I also agree, it depends on what you are cooking!. I buy extra virgin olive oil by the gallon and use it often, but I stock and use other oils too, like peanut, sesame, grape seed, etc!. I use oils for sauteing, blending, mixing, and topping!.

But there are times when a recipe specifically calls for butter, for not just flavor, but for the milk solids!. If you substitute with an oil, the flavor profile and texture will chance!. Some things, like cookies or pancakes, just taste horrible with olive oil!. And some dishes suggest melting butter in and oiled pan to keep the butter from burning!.

When I'm cooking something that requires layers of flavors, like a mushroom barley soup, where the onions and garlic are first sauteed in butter, followed by the mushrooms, then by sherry and soy sauce - then I use butter, otherwise the end flavor won't be as rich if I had used oil!.

When something calls for the flavor and richness of butter (I don't use it that much, really) than I don't hesitate to pull it out of the freezer!. Everything in moderation, though!. That's my rule of thumb!.Www@FoodAQ@Com

Depends on what you are cooking!. I use a little of all of it!. Butter makes some things taste better but others natural oil does!. It just depends on how healthy you want to eat!.Www@FoodAQ@Com

Natural oil is way way way more healthier than butter!. If you carry on cooking with butter then that will lead you to heart problems but natural oil won't do anything to harm you;)
