Depends on what you want you are going to do with it!. If you want a corned beef sandwich or a Reuben, then you should slice it as thin as you can against the grain (you'll never get it as thin as a deli without your own slicer so don't worry)!. If you are serving it with cabbage or potatoes I prefer it a bit thicker since it is usually cooked very slowly and is very tender to begin with!. Again cutting against the grain!. Cutting on a bias (angle) will yield a prettier presentation but a slightly less tender cut!. I cut straight down against the grain!.Www@FoodAQ@Com
I slice it very thin and against the grain of the meat, and somewhat on an angle!. If the meat shreds you are cutting it with the grain and not against the grain!. Slicing it very thin, makes it more tender!.Www@FoodAQ@Com
