stocks are made with the bones of the meat that it takes it's name (chicken beef, etc) and usually certain vegitables like carrots, celery and onions!. Broths are made with the bones and the some meat of the animal and the rest is the same!. Many stocks become broths during cooking because you cook the same meat in them!.Www@FoodAQ@Com

A Stock or Fond is made from usually the knuckle bones of veal,chicken or beef, or really anything you want to use,and the shells of seafood,they are roasted and then added to Mireproix(onion 50%,carrot 25%,and celery 25%) along with a Sachet(thyme,parsley,bay leaf and black peppercorns), this depending on if it is a long or short stock is simmered for up to 12 hours(long stock),and then strained,chillled and kept later for service, a broth is very similar but they use also meat to flavor the liquid!.Www@FoodAQ@Com
