Cucumber Dip
2 (8 oz!.) pkgs!. cream cheese, softened
1 cucumber, peeled and diced
1 small onion, diced
2 Tbsp!. mayonnaise
1 tsp!. garlic salt
In a bowl, thoroughly blend the cream cheese, cucumber, onion, mayonnaise, and garlic salt!. Cover, and chill in the refrigerator until serving!.

This is delicious;

2 medium cucumbers - peeled, seeded, and chopped
2 medium tomatoes, chopped
1/2 cup chopped green bell pepper
1 jalapeno pepper, seeded and minced
1 small onion, chopped
1 clove garlic, minced
2 tablespoons lime juice
1 teaspoon minced fresh parsley
2 teaspoons minced fresh cilantro
1/2 teaspoon dried dill weed
1/2 teaspoon salt
1 (12 ounce) package tortilla chips

In a medium bowl, stir together the cucumbers, tomatoes, green pepper, jalapeno pepper, onion, garlic, lime juice, parsley, cilantro, dill, and salt!. Cover and refrigerate for 1 hour!. Serve with tortilla chips!.

Cucumber Baguettes
1 (8 ounce) package cream cheese, softened
1 (!.7 ounce) package dry Italian-style salad dressing mix
1/2 cup mayonnaise
1 French baguette, cut into 1/2 inch thick circles
1 cucumber, sliced
2 teaspoons dried dill weed
In a medium bowl, mix together cream cheese, dressing mix and mayonnaise!.
Spread a thin layer of the cream cheese mixture on a slice of bread, and top with a slice of cucumber!. Sprinkle with dill!. Repeat with remaining ingredients!.Www@FoodAQ@Com

suprised no one has posted Tzatziki, and it's very healthy!.

Get some yogurt, I use fat free, maybe a litre of it!. throw in as much garlic as you want, 4 or 5 cloves chopped up, but i freakin love garlic I'd add more!. I throw in some olive oil, maybe quarter cup, but you can omit that if you want!. Salt and pepper to taste!. Chop up 1 cucumber, very thin slices, mix it with the yogurt mixture, you can also grate the cuke!. add dill, fresh or dried!.

I think this dip tastes better the next day, but if you want eat it right away! good for any kind of bread, i use pita's of courseWww@FoodAQ@Com

Cucumber dip

2 TB fresh dill, chopped
1 ts lemon juice
salt & pepper to taste

Combine all & mix well!. Chill & serve!. serve with crackers!.

This is so simple!.!.!. and you eat it with bread =)

2 or 3 medium cucumbers
3 or 4 roma tomatos
1 medium or 2 small jalapenos (be sure they are not mexican!)
1/2 walla walla sweet onion
1 handfull fresh parsley (shredded)
1/4 c extra virgin olive oil
salt and pepper to taste

cut all veggitables into small cubes!.!.!. about 1/4 inch wide!.!.!. combine all ingredients into a bowl and serve with french bread!.!.!.!.
