Dad's Stuffed Bell Peppers Recipe
Ingredients
4 green or red bell peppers
Salt
5 Tbsp extra-virgin olive oil
1 medium yellow onion, peeled and chopped
1 clove of garlic, peeled and chopped
1 lb of lean ground beef
1 1/2 cup of cooked rice or 3/4 cup of raw instant rice
1 cup chopped tomatoes, fresh or canned
1 tbsp chopped fresh oregano or 1 tsp of dried oregano
Fresh ground pepper
1/2 cup ketchup
1/2 tsp of Worcestershire Sauce
Dash of Tabasco sauce
Method
1 Bring a large pot of water to a boil over high heat!. Meanwhile, cut top off peppers 1 inch from the stem end, and remove seeds!. Add several generous pinches of salt to boiling water, then add peppers and boil, using a spoon to keep peppers completely submerged, until brilliant green (or red if red peppers) and their flesh slightly softened, about 3 minutes!. Drain, set aside to cool!.
2 Preheat oven to 350 degrees F!. Heat 4 tbsp of the oil in a large skillet over medium heat!. Add onions and garlic, and cook, stirring often, until soft and translucent, about 5 minutes!. Remove skillet from heat, add meat, rice, tomatoes, and oregano, and season generously with salt and pepper!. Mix well!.
3 Drizzle remaining 1 tbsp!. Oil inside peppers, arrange cut side up in a baking dish, then stuff peppers with filling!. Combine ketchup, Worcestershire sauce, Tabasco sauce, and 1/4 cup of water in a small bowl, then spoon over filling!. Add 1/4 cup of water to the baking dish!. Place in oven and bake for 40-50 minutes (or longer, depending on how big the peppers are that you are stuffing), until the internal temperature of the stuffed pepper is 150-160°F!.

1/3 C!. of apple cider vinegar,
1/8 tsp!. of black pepper,
1/4 C!. of packed brown sugar,

Drain the pineapple; reserve juice!.
Combine the juice with cornstarch, vinegar, sugar, and black pepper; set aside!.

Sauté bell peppers, chopped, with onion until crisp-tender; remove!.
Spray skillet again and sauté chicken 3 to 5 minutes or until the chicken changes in color!.
Stir in reserved vinegar mixture; cook 2 to 3 minutes or until chicken is cooked and sauce is thickened!.
Add vegetables and pineapple; heat, stirring occasionally!. Serve over rice if desired!.

Yes I am! and i make wonderful stuffed peppers! cut pepper in half lenthwise take seeds out Mix (I use a meatloaf mix ground pork and sirloin ground beef) meat with 1 pkg of onion soup mix,whorchestershire sauce(a couple of shakes) some ketchup about a !/2 cup,I use any left over salsa sometimes!. And rice any instant kind will do about 1/2 cup per pound and some pepper I don't use salt because the soup mix has enough already!. stuff peppers and any left over salsa or diced tomatoes or Tomato sauce over the tops and your good to go!Serve over pasta or Real mash potatoes!.Cook at 350* about 30 min!. Chicken- brown Chicken( I use chicken legs or thighs) in Olive Oil with some onion(if you want) green peppers and garlic!. add a can of chicken broth, add a can of diced tomatoes with celery,or stewed tomatoes or again any kind of leftover salsa cover and cook on low until chicken is done and then add instant rice and cover and turn off heat and let rest for about 15 min or until rice is done!. For stuffed peppers, there are sooo many things you can do!. I actally really like to make a chicken or tuna salad with a little mayo and chopped walnuts and some raisons and then you fill the pepper!. But you could also make rice and mix it with salsa and veggies or rice with cream of mushroom or cream of chicken soup and bake it inside the peppers at 375 for 20 minutes!.

cut your peppers in half, season your ground beef (like you are making meat balls), pack it in there and lay the peppers meat side up and bake at 375F until meet is browned slice mozzarella cheese (or cheese of choice) and place on the pepper and put back into the oven until the cheese is melted!. When you take them out of the oven top it all off with spaghetti sauce!.

Good chicken stew!.Cut up potatoes and carrots and out in a pot with chicken!. In blender, combine 1 small onion, i medium tomato, and 1 small bell pepper!. Add garlic, cumin, salt and pepper and blend!. To this mix add about 1/2 cup of orange juice!. pour this mixture into the pot of chicken and veggies and let it cook for about 30 mins!. Put chicken into baking dish!. Mix Coca Cola, soup mix and flour together!. A whisk does a good job!. Pour over chicken!. Cover and bake in 350 degree oven for 1 to 1 1/2 hours or until done!. Serve with rice or potatoes!. The sauce makes its own gravy!.

2 cup unsalted chicken broth
1 tbsp olive oil

2 tbsp pickling spice
1/2 red bell pepper, sliced
1 lbs boneless chicken breast halves

2 tbsp minced jalapeno chili with seeds
1 onion, halved, thinly sliced
1/3 cup rice wine vinegar
1/4 cup fresh cilantro leaves
3 large garlic cloves, minced
Baked (no oil) tortilla chips boil broth and pickling spice in heavy large saucepan ten minutes!. Strain and return liquid to saucepan!.
Add chicken, onion, vinegar, garlic, oil and cumin to pan!. Simmer over very low heat until chicken is just cooked through, about ten minutes!. Transfer chicken and onions to shallow dish!.
Top with bell peppers and minced chilli!. Boil cooking liquid until reduced to 2/3 c, about ten minutes!. Pour liquid over chicken and let cool 30 minutes!.
Add cilantro to chicken mixture!. Cover and refrigerate until well chilled, turning chicken occasionally, about 4 hours (can be prepared one day ahead)!. Slice chicken and transfer to plates!.
Top with marinated vegetables and some of the juices!.
Balsamic Chicken and Pears - serves 4
2 tsp vegetable oil
4 each chicken breasts, boneless
2 each pears, unpeeled and each cut into 8 wedges
2 cup chicken broth
6 tbsp balsamic vinegar
4 tsp cornstarch
3 tsp sugar
1/2 cup raisins
Heat 1 tsp vegetable oil in skillet over medium-high heat!.
Add chicken breasts and cook 8-10 minutes, turning once until juices run clear when sticking with fork!. Remove chicken to plate!.
In same skillet, add remaining 1 ts vegetable oil and cook pear wedges until lightly browned and tender!.
In small bowl, mix chicken broth, balsamic vinegar, cornstarch and sugar until blended!.
Add chicken-broth mixture to skillet with pears and raisins (or any other preferred dried fruit) and bring to boiling; boil one minute, stirring constantly!.
Return chicken breasts to skillet and heat through!. Serve with pasta with vegetables

Baked (no oil) tortilla chips boil broth and pickling spice in heavy large saucepan ten minutes!. Strain and return liquid to saucepan!.
Add chicken, onion, vinegar, garlic, oil and cumin to pan!. Simmer over very low heat until chicken is just cooked through, about ten minutes!. Transfer chicken and onions to shallow dish!.
Top with bell peppers and minced chilli!. Boil cooking liquid until reduced to 2/3 c, about ten minutes!. Pour liquid over chicken and let cool 30 minutes!.
Add cilantro to chicken mixture!. Cover and refrigerate until well chilled, turning chicken occasionally, about 4 hours (can be prepared one day ahead)!. Slice chicken and transfer to plates!.
Top with marinated vegetables and some of the juices!.
Balsamic Chicken and Pears - serves 4
2 tsp vegetable oil
4 each chicken breasts, boneless
2 each pears, unpeeled and each cut into 8 wedges
2 cup chicken broth
6 tbsp balsamic vinegar
4 tsp cornstarch
3 tsp sugar
1/2 cup raisins
Heat 1 tsp vegetable oil in skillet over medium-high heat!.
Add chicken breasts and cook 8-10 minutes, turning once until juices run clear when sticking with fork!. Remove chicken to plate!.
In same skillet, add remaining 1 ts vegetable oil and cook pear wedges until lightly browned and tender!.
In small bowl, mix chicken broth, balsamic vinegar, cornstarch and sugar until blended!.
Add chicken-broth mixture to skillet with pears and raisins (or any other preferred dried fruit) and bring to boiling; boil one minute, stirring constantly!.
Return chicken breasts to skillet and heat through!. Serve with pasta with vegetables
