Question: What is your favorite recipe for stuffd green peppers!?
Answers:
Use same mixture as for Stuffed Cabbage rolls!. Use 4 large green peppers, 1 lb!. ground beef, 1 egg, S&P, 1 small onion sauteed in margarine, 1/4 cup rice (parboiled), and 1 Table!. condensed tomato soup!. Be sure you parboil peppers for 5 minutes in boiling water and rice for 10 minutes (in separate pot) also in boiling water!. Drain rice!. Mix all ingred!. Cut peppers in 1/2 & stuff then lay in small roaster!. Mix 1 can tomato soup with 1 can water and pour over top!. Add l bay leaf!. Cover with top & cook about 1 hr!. at 350 degrees!. Baste occasionally!. You can use yellow peppers--very mild!.Www@FoodAQ@Com

Go ahead and cut the tops our of your peppers, seed and disguard!.!.!. blanch and set aside!.

Filling
1/2 lb ground beef
1/2 lb ground turkey
1 small onion diced
1 small red bell pepper diced into tiny cubes
1 clove of galic finly minced
salt, pepper
1 egg
red pepper flake (optional)
panko (breadcrumb)
parmesean cheese (the undisputed king of all cheeses)
Parboiled rice
tomato sauce (two small cans)

combine all ingredients (except panko and parmesean) stuff the previously parboiled green peppers and top with panko, melted butter (just a little) and parmsean!.!.!. place stuffed peppers in a 9 X13 pan (glass is great for this) pour just a little water in the bottom of the pan with the peppers in it!.!.!. bake at 350 degrees until done!.

Stuffed Peppers for 2
(Can be doubled, tripled!.!.etc!.)

Mix together:
1/2 lb!. Hamburger (or gr!. turkey)
a pkg!. of onion soup mix
3/4 of 1 small can tomato paste!.
1/2 cup rice

Prepare peppers!.!.!.!.!.cut off top and take out seeds!.

Fill with meat mixture!. Place in an oven proof dish/pan that has a lid!.
Place any extra meat mixture in bottom of pan or make a couple of patties & freeze for future use!.

Mix remaining tomato paste with can of tomatoes (crushed!.!.!.!.diced!.!.!.etc!. whatever you want to use!.)

Pour tomato mixture around peppers, cover and bake in 375 degree oven for 1 hour!.

Serve with cornbread or garlic bread!.


Hint: For quick & E-Z!.!.!.I have used a can of 'hash' for the filling!.Www@FoodAQ@Com

I have found it best to wash and slice off the top of my bell peppers, removing the core and seeds, then I dip them in boiling, salted water, until the color of the pepper changes!. Then I drain and add my meat mixture!.

Meat Mixture: I brown ground beef (I use organic, grass fed beef), chopped onion, crushed garlic, and a little chopped bell pepper, then adding some pureed tomato, and thin with a little V8 Juice!. Season to taste, using salt, pepper, onion powder, a touch of red pepper and paprika!. If you want the carbs, add some cooked rice and stir well!. Then I stuff the peppers and place in a casserole dish, then covering with the left over V8 juice!. I put foil over the top and bake for about 40 minutes at 375 degrees!.Www@FoodAQ@Com
