My daughter shared with me some awesome spring rolls!. You take a pie pan and fill it with an inch of water!. Place one Vietnamese rice wrapper - it looks like a tortilla except it is rigid, white and almost opaque - in the pie pan and let it soak for about a minute!. It will get a little soft, and you put it on your plate!. In the middle of the wrapper you pile on a section of cooked rice stick noodles!. You need to cook these first, but it is like cooking spaghetti noodles!. Just make sure you rinse them well in cold water!. My daughter makes little piles of these, and we use a pile for each spring roll!. On top of the noodles we put a little row of cooked fish, shrimp, chicken, pork or beef!. Whatever protein source you like the best!. On top of the protein put some green onion stalks (the green tops sliced thinly), some fresh cilantro, basil and/or mint slices!. These you can buy in the produce section of the grocery store!. Just put the bundle in a jar of water and store in the refrig!. They will last til you eat them all up! On top of it all pile on a very good portion of leaf lettuce!. Ours is small right now, but you could tear it so it is about 2 to 3 inches wide and 4 or 5 inches long!. Now you should have a wrapper that is wet, and has a great big pile on it!. Tuck the two sides each to the middle!. On the edges that touch the wrapper rub that part so they will stick together!. Now fold down the top!. Carefully push the filling into the middle and roll it all up tight!. It should look like a tight burrito!. This takes a lot of practice, but you get to eat your handiwork! We like to dip it into peanut sauce!. You make this by mixing a little water in about a half cup peanut butter that has a little bit of soy sauce added to it!. You can spice it up with a little chile sauce as well!. My daughter makes a sauce with fish sauce, rice vinegar, garlic and chile, but I make the peanut sauce!. Maybe your mom could help you with the fish sauce!. The recipe is on line too!. These are really good and can be made with a wide variety of protein foods and veggies!. They are pretty easy to make and yummy!. Ranch 99 has all of the ingredients too!.

Trader Joe's has pizza dough that you roll out, put pizza sauce on - you can buy it in a can or check on line for a sauce recipe - and pile on the mozarella cheese and toppings that you like!. If you don't have a pizza pan, just use a cookie sheet!. Put a little cornmeal on the pan first, or spay with Pam or add oil so the crust doesn't stick!. Some people like the toppings under the mozarella, and others like it on top!. Whichever you like, just slice them and bake it up!. Tomatoes you need to put on after baking, as they are too wet and don't cook up so well!. Be a little judicious with your toppings, but you will get really good at different varieties!. also, the dough makes great bread sticks with spaghetti!.

Just boil some noodles for approximately 10 minutes!. A handfull is usually a good amount!. Test it to make sure it is not too hard, nor mushy!. There are tons of sauces in bottles to choose from, and you can add things that you like to these too!. A little grated parmesean cheese is nice, and a tossed salad is good too!. Watch out, your mom may want you to cook on her days off! :)

If you find a really nice big potato in the produce section, you could wash it really well, pop it into the microwave and bake it!. Then slit it open and smother it with chili that you have warmed up from the can!. Choose a nice quality chili, and you have a nice dinner there too!.

On cold days you could open a can of clam chowder and heat that through!. While it is cooking (make sure you watch it and stir it so it does not burn on the bottom of the pan) take a mini- round loaf of bread and make a good sized circle on the top cut out a hole, and scoop out a bit of the bread!. When the clam chowder is hot, ladel it into the "bowl" that you have created, and eat up!.

You sound like a pretty smart kid, and I think this should get you started!. You will be surprised at how creative you become as you eat better each day!. Don't be afraid to experiment!.Www@FoodAQ@Com
