Flattened rice is also known as beaten rice and
is a dehusked rice which is flattened into flat light dry flakes!. These flakes of rice swell when it absorbs water,milk or any other liquids whether hot or cold!. The thicknesses of these flakes vary between almost translucently thin (the more expensive ones) to nearly four times thicker than a normal rice grain!.

This easily digestible form of raw rice is very popular across India and Bangladesh, and is normally used to prepare snacks or light and easy fast food in a variety of Indian cuisine styles, some even for long-term consumption of a week or more!. It is known by a variety of names: Poha in Hindi, Chniré in colloquial Bengali, Phovu in Konkani, Chudaa in Oriya, Atukulu in Telugu, Bajeel or Bajil in Tulu, Aval in Malayalam and Tamil, Avalakki in Kannada, Pavva in Gujarati, Chiura in Nepali and Pohe in Marathi!.

Flattened rice can be had raw by immersing it in plain water or milk, with salt and sugar to taste, or lightly fried in oil with nuts, raisins, cardamoms, and other spices!. It can be reconstituted with hot water to make a porridge or paste, depending on the proportion of water added!.

Flattened rice is also a convenience food and very similar to instant mashed potatoes ,in uses, and spirit!.

Here are the names of some dishes!.

Chniré'r pulao :- An exquisite snack prepared by immersing the rice flakes in cold water, drying them, and then preparing pilaf-style with nuts, raisins, black pepper, green chillies, and salt and sugar to taste!. This is very popular as a breakfast or evening dish in families, and may not be available in any stores or restaurants!.
Chniré bheja :- A remarkable option when one is down with fever or an upset tummy!. Some flakes are immersed in bowl of usually cold water, flavoured with lime juice, salt, sugar, and a little black pepper!.
Bajeel Ogarne :- Here beaten rice is seasoned with mustard seeds,coconut oil, red chillies!.
Beaten rice with curds :- Here beaten rice is soaked in water and then sieved!. Curd is added with table salt,preferably eaten with mango or lemon pickle!.
Kanda Pohe :- In this dish beaten rice is soaked and sieved!. Small pieces of boiled potato ,onion,mustard seeds,turmeric and red chilli are seasoned and mixed with beaten rice and served hot!.
Dadpe Pohe :- Thin or medium beaten rice is mixed with fresh coconut, grated green mangos, chili powder, corriander!. Then it is seasoned with salt and a tadka (fried mixture) of peanut oil, mustard seeds, turmeric and finely chopped onions!.
Sweet Bajil ( Tipe Bajil in Tulu ):- Beaten rice is mixed with jaggery and grated coconut and eaten!.
Khara Bajeel :- The beaten rice is mixed with red chilli powder,salt and coconut!.Sometimes seasoned!.
Sajjige Bajeel : - Combination of upma and Khara bajeel!.
Dhaiyya Phovu : - Combination of yogurt, sugar and phovu!.


Pauwa Recipe
Traditionally served in India for breakfast, this takes about 15 minutes to make!.
1 onion
1 potato
1 or 2 chillies (optional)
2 tablespoons mustard seeds
Handful fresh curry leaves
1 lime
1 tsp of raw sugar
1 tsp of sea salt
1 tsp of turmeric
1 cinnamon stick
1?2 a packet of flattened rice (pauwa)
1-2 tablespoons ghee or olive oil
1 small bunch of fresh coriander leaves

Boil the potato and then chop it into small cubes and set aside!.
Next chop the onion!. Heat ghee in a medium sized wok or frying pan and sauté the onion!. Do not make it brown!. Add potato cubes and then the chopped chillies, turmeric, mustard seeds, curry leaves, cinnamon, sugar and sea salt!. Wash the flattened rice in a sieve, drain it and then add to the mixture in the wok!. If necessary, wet it with a little water to make sure it does not dry up totally!. Cover and steam for a few minutes!.Squeeze over fresh lime and garnish with coriander leaves!. A delicious light and spicy meal - perfect for springtime!

Poha - Vegetarian

2 cups flattened rice (poha)
available at any Indian grocery store!.
2 cups water
1 potato, chopped small
2 tablespoons ghee
1 onion, chopped fine
1/4 cup groundnuts (raw peanuts)
1/2 teaspoon turmeric (just enough to color the rice)
1/2 teaspoon mustard seeds
Lemon juice, to taste
Salt and pepper

Poha Recipe Directions:
Soak the flattened rice (poha) in water and set aside!.
In a large round!.bottomed frying pan, heat the ghee till very hot!. Add mustard seeds, onion, potato and groundnuts!. When the mustard seeds are tender,
cover with water and cook till potato and groundnuts are tender!.

Drain off any excess water from the soaked rice!. Add the turmeric to the rice until it's a nice golden yellow!. Add the rice to the frying pan and mix with the
potato!.onion mixture until hot!. Add salt, pepper and lemon juice to your taste!.

Coconut Poha (Flattened Rice)


Ingredients
2 cups thick poha or flattened rice
salt to taste
2 tsp oil
1 tsp mustard seeds
1 tsp black gram dal (soaked in water for 2 mins and drained)
3 dried red chillies
3 green chillies minced or chopped fine
3/4 cup grated coconut (thawed if frozen)


Method
1) Rinse poha, allow to drain!. Add salt, toss and set aside


2) Heat oil in a skillet, add the other ingredients, allow to sputter!.


3) Add and fry till coconut turns a reddish brown
Add poha and cook till dry

If you don't have poha, you can also substitute cooked rice!. Just increase the amount of coconut and you'll have coconut rice!.Www@FoodAQ@Com
