Do you have a recipe for Creamed Chipped Beef that includes cream cheese and nutmeg?!
Answers:
4 Tbs (60 ml) butter
1/2 lb (250 g) mushrooms -- sliced
6 oz (170 g) dried chipped beef
Salt and freshly ground pepper to taste
1 Tbs (15 ml) Worcestershire sauce
1 recipe cream sauce (see below)
4 to 8 slices toasted white bread
Cream Sauce
6 Tbs (90 ml) butter
6 Tbs (90 ml) flour
1 cup cream cheese
1 cup (250 ml) heavy cream
Salt and freshly ground pepper to taste
A grating of fresh nutmeg
Melt the butter in a heavy saucepan over moderate heat!. Add the mushrooms and saute for 5 minutes, stirring frequently!. Add the chipped beef and Worcestershire sauce and stir to combine!.
Remove from the heat!. Taste for seasoning with salt and pepper - the chipped beef may already be salty enough!. Combine with the cream sauce and spoon over toasted white bread!.

Melt the butter in a heavy saucepan over moderate heat!. Stir in the flour and allow to bubble for 3 to 5 minutes, stirring frequently!. Add the cream, cheese and the seasonings and stir constantly with a whisk until thick and creamy!. Makes about 2 cups (500 ml)!.Www@FoodAQ@Com

1 pkg!. (8 oz!.) cream cheese, softened
2 tbsp!. milk
1 jar (2 1/2 oz!.) dried beef, minced
1 c!. sour cream
2 tbsp!. minced onion
2 tbsp!. minced green pepper
1/2 tsp!. garlic powder
1/2 tsp!. pepper
dash nutmeg
Melt butter and saute pecans!. Remove from heat and reserve!. Blend cream cheese and milk in a bowl!. Add remaining ingredients and mix well!. Turn into lightly buttered small casserole!. Cover with pecans and bake at 350 degrees for 20 minutes!. Serve hot with crackers or corn chips!.
CHIPPED BEEF CREAM CHEESE BALL - I couldn't resist posting
1 (8 oz!.) cream cheese
1 tbsp!. milk
3 or 4 tbsp!. horseradish
1 pkg!. dried beef
1 bunch spring onions
dash nutmeg
Soften cream cheese in bowl!. Mix together with milk and horseradish!. Cut 1/2 of the chopped beef into tiny pieces, 1/2 of the spring onions, add nutmeg, and mix together!.
Form a ball!. If too soft chill!. Cut the other 1/2 of chipped beef and onions, and press into the surface of the ball!. Refrigerate!. Serve with crackers!. Beat if made a day ahead!.
Background: Creamed chipped beef served on buttered toast --- a great breakfast! This is affectionately known in the military as SOS, "$#@& on a shingle!." You may vary ingredients to suit your taste!. Don't over thicken the gravy, it should drop off the spoon!.
