Can anyone tell me how to preserve or pickle beetroot?!

First you need to cook them,bring to the boil,simmer until tender !.Remove and allow to cool!.Cut off top&bottom then slice &set aside!. Mix one&half cups of above cool juice & one&half cups of vinegar bring to boil add half teaspoon salt,two teaspoons of dill seeds,one tablespoon of dry mustard and one cup of sugar!. Place Beetroot slices in sterilised jars and pour on hot vinegar mixture!. Place on seals and store in cool dark place!.Www@FoodAQ@Com
Once they are cooked and peeled the best way is to just put them in vinegar and you can add a touch of sugar for a touch of sweetness!.Www@FoodAQ@Com
