Butter chicken side dishes?!


Question: Butter chicken side dishes!?
I am having some friends over for dinner soon and I was thinking of making butter chicken!. Any suggestions of Indian vegetarian side dishes I could serve along with this!? Thanks!

Answers:
Stuffed Bhindi (Okra)

1 pound Okra (Bhindi), washed and dried
3 tbsp - oil
1 tsp cumin seeds (jeera)
1 medium sized onion, chopped
2 green chilies, seeded and chopped
3/4-inch ginger, finely chopped
A pinch of Asafetida powder
1 tomato chopped
Stuffing :
3 tsp coriander powder
2 tsp turmeric powder
2 tsp ground fennel (saunf)
2 tsp dried mango powder (amchur)
1/2tsp chili powder or to taste
Salt To Taste


Preparation of stuffed okra:
Cut the stalk of each okra and make lengthwise slit!.
Combine stuffing ingredients and mix well!. Stuff each okra with the mixture!.
Sauté cumin with the little oil until it starts to crackle!.
Add onions, green chilies and ginger!. Sauté till onion turns transparent, then put in asafetida and cook for a few seconds!.
Add tomato and cook until it turns pulpy!.
Add the okra and cook for 5 minutes until tender and well coated with the sauce (masala)!.
Serve stuffed bhindi hot with chapati, paratha or rice!.


Vegetable Curry

1/2 medium-sized (100g/4oz) aubergine (eggplant) cut into 2cm x 1cm/?in x 1/2 in sticks
2 small carrots (100g/4oz), peeled and cut into 2cm x 1cm/?in x 1/2 in sticks
100g/4oz/1 cup peas
100g/4oz/1 cup French beans, cut into 2!.5cm/1in pieces
1 medium-sized potato (100g/4oz), peeled and cut into 2cm x 1cm/?in x 1/2 in sticks
50g/2oz/ 1/2 cup freshly grated coconut
4 fresh hot green chillies
2 tbsp white poppy seeds
1 1/4 tsp salt
3 medium-sized tomatoes, roughly chopped
1 tbsp natural plain yogurt
1 tsp garam masala
2 tbsp chopped, fresh green coriander


How to make vegetarian curry:
Place the aubergine (eggplant), carrots, peas, French beans and potato in a medium-sized saucepan!. Add 250ml/8fl oz/1 cup water!. Bring to the boil!. Cover, turn the heat to medium and cook for 4 minutes or until the vegeatbles are just tender!.
Meanwhile put the coconut, chillies, poppy seeds and salt in the container of an electric blender!. Add 150ml/5fl oz water and grind to a fine paste!. Set aside!.
When the vegetables are cooked, add the spice paste and another 150ml/5fl oz water!. Stir and simmer gently for 5 minutes!. Now add the tomatoes, the yogurt and the garam masala!. Stir gently to mix well!. Bring to the boil and simmer gently for 2-3 minutes!. Turn into a serving dish and garnish the vegetable curry with the fresh coriander!.
Bhindi Bhaji
1 pound okra
2 medium onions, chopped
1/4 tsp garlic paste or powder
1/4 tsp coriander paste or powder
1/8 tsp cumin
3 large tomatoes
2 tsp oil
1/2 cup chopped cilantro

How to make bhindi dopiaza :

Cut the tip and the very bottom from the okra just to clean it, but do not slice!.
Heat oil in a pan over medium heat!. Add onion and cook for 3 minutes!.
Add all ingredients except okra, tomato and cilantro!. Cook for 3 minutes!. Add okra, then cook for 6 to 8 minutes!. Garnish with tomato and cilantro!.
Serve the bhindi bhaji with rice, naan or pita bread!.Www@FoodAQ@Com

We in India have butter chicken with a chapati (whole wheat flat bread roasted on stove or a tandoor) or naan (a thicker flat bread made from flour and baked in an earthen tandoor oven) or steamed rice or jeera rice (steamed rice stir fried with cumin)!. We also serve a salad of sliced onions in mint chutney (sauce) or simply some chilled yogurt!. That's it!.
Since butter chicken is spicy, the side dish is usually light-flavoured or something that compliments its taste!. Here are the recipes for the chapati, naan, jeera rice (if you are a complete novice at Indian cooking) and the mint chutney!.

CHAPATI
Ingredients: Atta ie!. whole wheat flour, water and some salt to taste!.
Procedure: Knead the dough into a consistency of a pizza dough and don't forget to add salt!. Using a rolling pin, roll very thin (so thin so that it won't stick to the surface or get torn if you try to pick it up)!. For this spread some dry flour on the chapati as a non-sticking agent!. Roast on a pan till it swells up a little and then on open fire (using tongs) till it swells pretty round!. (The first one may get charred up but then you'll get the knack of it)

NAAN
Same as chapati but thicker and roasted in earthen oven ie!. tandoor (so you can't try this at home but don't worry, chapatis are definitely heathier than naans!.)

JEERA RICE
Ingredients: Steamed rice, jeera ie!. cumin seeds, oil!.
Procedure: Heat oil in a pan!. Add cumin seeds (about a tablespoon for 1 cup rice)!. When they are roasted good, add rice and fry for some time!.

MINT CHUTNEY
Ingredients: A handfull of pudina ie!. mint leaves, one cup sour curd or yogurt, a pinch of cumin powder, a green chilly, a garlic clove, salt to taste!.
Procedure: Blend together all the above ingredients to a ketchup-like consistency!. Serve chilled poured on plain sliced onions!.
Using the mint chutney, you can also devise a more filling salad of pasta, shrimp and lettuce!.
Enjoy! End your meal with kulfi, the Indian version of ice-cream (Just add powdered cardamom, nuts as flavouring and 3-4 saffron twigs as colouring to your normal ice cream mixture before freezing)!.
