Bbq beef short ribs?!


Question: Bbq beef short ribs!?
I am catering a small early afternoon cocktail party for someone and they want beef short ribs done on the bbq!. I have only tried them once before and I think I overcooked them b/c they were tough!.
so what I am wondering is can I par-cook them in the oven the evening before and just finish them off on the grill!? please include all temps and times that you used!. looking for tried and true methods!. thanks!.Www@FoodAQ@Com

Absolutely!. Yyou can braise them in the oven!.!.!.and in fact you should do this!. Just heat them on the grill to warm them up and add the "grilled" flavor!.

Terri's Beer Braised Ribs

3 lbs short beef ribs or county style spare ribs!.
2 large onions, sliced
1 12 oz can beer (any kind)
Barbecue sauce 1 quart!.!.your own or homemade!.

Brown ribs in skillet (just for color 2-3 minutes)
Lay ribs in baking dish
Lay sliced onions on top of ribs!.
Pour beer over all!.
Cover dish tightly with foil!.

Bake at 375 for 2 hours!.

Remove from oven!. Pour off beer and fat!.!.!.trash it!.
Remove the foil!.
Pour on sauce!.
Bake uncovered another 45 minutes or until ribs are fork tender!. Let stand 10 minutes and serve!.

You can finish these on the grill by cutting the second bake time in half!.

Beef Short Ribs with Zesty Sauce BBQ Recipe
This recipe uses two vinegars to make the most tender beef ribs you ever ate!.

For the sauce:

1/4 cup olive oil
1 medium Spanish onion, chopped
1 tablespoon chopped garlic
2 large tomatoes, peeled and chopped
1/2 cup apple cider
1/4 cup balsamic vinegar
2 tablespoons catsup
1-1/2 tablespoons chopped fresh basil
1-1/2 tablespoons prepared mustard
1-1/2 tablespoons sugar
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin

3 pounds beef short ribs, cut into 6-inch lengths


To make the sauce: In a saucepan or large skillet heat oil!. Add onions and garlic and sauté 5 minutes or until translucent!. Add remaining sauce ingredients!. Bring to a boil!. Reduce heat and simmer uncovered for 30 minutes, stirring occasionally!. Process in a blender or food processor until smooth!. Chill in refrigerator until ready to use or up to 3 weeks!.

Make 4 vertical cuts about 1 inch apart in each short rib from top of rib to the bone!. Place ribs and 1-1/2 cup sauce in jumbo resealable plastic bag!. Close bag and marinate in refrigerator overnight!. Chill remaining 1/2 cup sauce!.

Remove ribs from bag and discard used sauce!. Place ribs in centre of cooking grate!. Grill 1-1/4 to 1-1/2 hours or until tender!. Brush with reserved 1/2 cup sauce during last 20 minutes of grilling!.

I do not use recipes but I will give this my best shot!.

Pre heat oven to 300

Get a dutch over (must be oven safe and have a lid)

Get some canola oil (do not use olive oil!) and get it hot on the stove!. Place seasoned ribs (a rub, just salt and pepper or whatever you like) into the hot oil and cook until brown!. During this time place some finely chopped onions in there too!. Once the ribs are brown and the onions are slightly brown pour in a mixture of red wine (Shiraz is best) and chicken stock such that the liquid comes up about 3/4 of the way of the ribs!. Place in the oven covered for 2 and 1/2 to 3 hours depending on the size and amount ribs!.

Usually if they are tough, they have not been cooked, slowly, long enough!. If I make short ribs, I braise them, crock-pot them, or par-boil them for a bit, and yes, you can finish them off on the grill!. I'll try to get back with times and temps, but I usually cook by ear!. lol When it looks good, feels good, and tastes good, they're done!

Maybe you should try marinating them longer!. They shouldn't be tough unless your flame is to high or the ribs are too close to the flame!. You could bake them first but I think that they'll be even drier!.Www@FoodAQ@Com

As long as you simmer them slowly ( like 4 hours) in a little water and beef stock covered in the oven of 325 degrees!. They will be very tender!. Add some meat tenderizer to be sure!.Www@FoodAQ@Com
