Question: Do I need sugar in my rice vinegar when making sushi!?
Is it required to give the rice the right texture!? I could do without it if it's just for the taste!.Www@FoodAQ@Com

The sugar, is JUST for the sweetness!. Not the texture, because no matter what you put in the rice, it'll always hold up the same texture: hard, perfect, soggy!.!. what have you!. (Hard, if not enough water used to cook it!. Perfect, when there was just enough water, Soggy, if there was TOO much water!.)

You do not need sugar in your rice vinegar for sushi, you can try it, but I really don't think its necessary!. I think the only necessary time to use sugar, is to balance out the bitterness/sourness of the rice vinegar IF you've accidentally put too much rice vinegar in your rice!. But then again, you can always start your rice over, by just adding more rice to the already bitter/sour rice, and adding no more rice vinegar!.Www@FoodAQ@Com

Yes if you want the sushi rice!. Mix sugar in the vinegar then heat it up!. After you take it out of the microwave then pour it on the rice and mix it up very good!. Hope this helps!.Www@FoodAQ@Com

sugar + rice vinegar in the rice (JUST BEFORE IT IS COOKED), mixed well = good thing (as Martha would say)!.
