Need help preparing cooked, smoked turkey legs?!
I had the opportunity to purchase some fully cooked, smoked turkey legs!. There were no other directions on them beside heat and eat!. I would like to know if there is a method to "reheat" these to make them tender!. I have tried baking them in the oven at a low temperature uncovered, both with and without a small amount of water!. Can anyone give me any ideas!? There is a local company that serves these and the meat is very tender!. Preparing them by the above method seem sto make them tough!. The only other idea that I have is to heat at a low temp, covered wtih a small amount of water!. Any suggestions would be helpful!. Thanks in advance!Www@FoodAQ@Com

They would probably make great sandwich meat, cut across the grain!.
Chop the meat coarsely and add them to home-made tomato sauce; start with olive oil, chopped garlic, diced onion, cook gently for a few minutes!. Add your turkey and a bit of stock or wine!. Cook it down until onions are soft!. Add a can of whole, peeled tomatoes, mush them up a bit, but don't get to where you can't tell they're tomatoes!. When all hot and bubbly (mebbe 5 minutes after adding tomatoes) pour over cooked spagetti, toss and garnish with parsley or some-such!.
I like to boil down bones and freeze the resulting stock for my next soup, or just keep it in the fridge if I'll be using it soon!. You could also debone the meat, cook the bones, and use the stock for the current recipe!.Www@FoodAQ@Com
