Take the pits out by cutting the long direction down the side of the italian prune!. Remove the seed!.
Next, use a dehydrator or put them in your oven on a foil lined baking sheet!. Turn the oven on the lowest setting and allow them to dry!. Lay them butterflied open with the fresh cut side upward!. Check every 2 hours until they are the consistancy you are looking for!. This likely will take 12 hours or more and uses tons of electricity!. Unless you have a whole tree full that you can't can or freeze I would avoid doing this as it costs a bit and is very time consuming!.Www@FoodAQ@Com

My Deni dehydrator has five trays 12in Dia
and is only 300 watts
there is no reason why you can't sun dry as well!.,,, go to a salvage yard and get a bunch of window screens!.!.!. power wash at the car wash!.!.!.
