Some people say eating onions cut even an hour ago and left in the open can make you sick!. Is this correct!?Www@FoodAQ@Com

Answers:
Onions don't "absorb dirt"!. However, they have a relatively high sugar content, and so attract microbes at a higher rate than some other foods!. Some of those microbes could make you ill if they have multiplied to sufficient quantity (unlikely in as short as an hour, but theoretically possible under the right mix of circumstances)!. The way to avoid this is to cover the cut surface of the leftover onion as soon as possible to keep the microbes out!. Refrigeration also helps!. The handling of onions is no different than any other safe-food-handling practice!.Www@FoodAQ@Com

If it was securely covered after being cut (put in a sandwich bag with almost no air trapped in it, covered with plastic wrap, etc!.) and refrigerated, an onion is safe to eat *days* later!. We do this all the time!.Www@FoodAQ@Com
