Orange Pop Cake
(all ingredients can be altered for more figure friendly)

1 box of white cake mix
1 12 ounce can of orange pop (diet)

Mix ingredients together!. Pour batter into a sprayed 13 x 9 dish!. Bake for 30 minutes at 350 degrees!.

Topping:

1 container of whip topping (fat free, low sugar etc!.)
1 small box of orange powdered jello (sugar free)

Mix together topping and spread on top of cake!.

*I have also made this version with strawberry!. I found a Jones Strawberry soda and instead of powdered jello, I just used sliced strawberries on top of the whip topping!.Www@FoodAQ@Com

Very Strawberry Shortcake
Makes 12 servings!.

Strawberry Filling
3 cups sliced fresh strawberries
2 tablespoons SPLENDA? No Calorie Sweetener, Granulated
2 teaspoons balsamic vinegar
Shortcakes
2 1/2 cups reduced-fat biscuit mix
1 tablespoon SPLENDA? No Calorie Sweetener, Granulated
1 cup plain fat-free yogurt
1 1/2 teaspoons vanilla extract
Fat-free frozen whipped topping, thawed (optional)
Mint sprigs (optional)

Strawberry Filling Directions: Stir together strawberries, 1/3 cup SPLENDA? Granulated Sweetener and balsamic vinegar; let stand 1 hour, stirring occasionally!.

Shortcake Directions: Preheat oven to 425°F (220°C)!.

Combine biscuit mix and 1/3 cup SPLENDA? Granulated Sweetener in a large bowl!.

Stir together yogurt and vanilla; add to dry ingredients, stirring just until moistened!.

Turn dough out onto a lightly floured surface, and knead 3 or 4 times!. Pat dough to a 1/2-inch thickness!. Cut with a 2 1/4-inch round cutter, reusing dough scraps, if necessary!. Place shortcakes on an ungreased baking sheet!. Bake 12 to 15 minutes!. Serve warm with sliced strawberries!. Garnish, if desired!.

Apple and Pear Crisp
Makes 8 servings!.

Topping
1/2 cup all-purpose flour
2 tablespoons dark brown sugar
1/4 cup SPLENDA? Granular
1/4 teaspoon ground cinnamon
1 pinch ground nutmeg
4 tablespoos cold, unsalted butter, cut into pieces

Filling
4 large Macintosh or other tart apples
3 ripe Bartlett or Anjou Pears
2 tablespoons SPLENDA? Granular
3 tablespoons Apple Juice Concentrate

Preheat the oven to 400°F!. Lightly butter a deep 2 to 2 1/2 quart baking dish!. Set aside!.

Prepare Topping: Pour flour, brown sugar, SPLENDA? Granular, cinnamon and nutmeg into a medium mixing bowl!. Stir well!. Add butter and mix with an electric mixer, using the paddle attachment, until the topping is crumbly or sandy in texture!. Set aside!.

Prepare Filling: Peel, core and thickly slice the apples and pears!. Place them in the buttered baking dish!. The fruit should be at least 2 1/2-inches deep in the pan!. Add more fruit, if necessary!. Add SPLENDA? Granular and apple juice concentrate!. Toss until coated!. Cover with the topping!.

Bake in the preheated oven 40 to 50 minutes or until fruit is tender and the topping has browned!.

Blueberry Grunt (Diabetic)

1 1/2 tablespoons cornstarch
2 1/2 teaspoons Equal? for Recipes or 3/4 cup Equal? Spoonful? or 8 packets Equal? sweetener
5 1/2 teaspoons Equal? for Recipes or 1/3 cup Equal? Spoonful? or 18 packets Equal? sweetener
1/2 teaspoon ground cinnamon
1/2 cup water
1/8 teaspoon ground nutmeg
1 teaspoon lemon juice
1/2 teaspoon salt
1 teaspoon grated orange rind
3 tablespoons cold margarine, cut into pieces
4 cups fresh or frozen blueberries
1/2 cup skim milk
1 cup all-purpose flour
1/2 teaspoon grated orange rind
1 1/2 teaspoons baking powder

Mix cornstarch, 5 1/2 teaspoons Equal? for Recipes or 18 packets Equal? sweetener or 3/4 cup Equal? Spoonful? , water, lemon juice, and 1 teaspoon grated orange rind in 8-inch skillet!. Add blueberries and heat to boiling!. Boil, stirring constantly, until mixture is thickened, 1 minute!. Reduce heat and simmer, uncovered, 5 minutes!.

Combine flour, baking powder, 2 1/2 teaspoons Equal? for Recipes or 8 packets Equal? sweetener or 1/3 cup Equal? Spoonful? , spices, and salt in medium bowl; cut in margarine with pastry blender until mixture resembles coarse crumbs!. Stir in milk, forming soft dough; stir in 1/2 teaspoon orange rind!.

Spoon dough in 6 mounds on simmering blueberry mixture!. Cook, covered, on low heat until dumplings are done, 12 to 14 minutes!. Serve warm!.

Makes 6 servings!.

Tip: Blueberry Grunt is delicious served with fat-free, no-sugar-added ice cream or frozen yogurt, or with dollops of light whipped topping!.
Makes 8 servings!.

Cinnamon Apple Roll-Ups

1 (11-ounce) package refrigerated bread stick dough
2 medium size Granny Smith apples, peeled, cored, thinly sliced
1/2 cup Equal? Spoonful*
3/4 teaspoon ground cinnamon
2 tablespoons stick butter or margarine, melted

Unroll bread stick dough!. Separate at perforations to form 12 strips!.

Place 3 to 4 apple slices at the end of each strip!.

Combine Equal? and cinnamon!. Sprinkle 1 teaspoon Equal? mixture over apple slices on each strip of dough!.

Beginning at end with apple slices, roll up jelly roll fashion!. Arrange apple bundles, seam side down, in bottom of well-sprayed 1-quart oval casserole dish!. Brush with melted butter!. Sprinkle with remaining cinnamon-Equal? mixture!.

Bake in preheated 375°F oven 25 to 30 minutes or until golden!. Serve warm!.

Makes 12 servings!.

* May substitute 12 packets Equal sweetener!.
