How long would fresh basil olive oil keep?!
I am making a dipping sauce with olive oil and fresh basil by slightly cooking the herbs in the oil, then cooling and storing it!.
How long would it likely keep on a shelf!? Are there any ways to prolong the shelf life!? Thanks in advance!Www@FoodAQ@Com

Ok, well oil will usually keep more or less for as long as you want it to provided its kept in the dark and away from heat!.
I have a small recomendation for you which will make it easier for you in the long run!.
Rather than heating your oil with the basil in it, as this breaks down the structure of the oil and makes it more carcinogenic ( cancer causing ) bring a pot of slightly salted water to the boil, blanch your Basil in there for about 3 seconds, IMMEDIATELY putting it into ice water to cool down (this is important otherwise it will turn brown)
Squeeze out excess water, being careful not to squeeze it too hard!.
Put it into a blender turned on to the highest seting, slowly adding the oil to it, it will turn an amazing kermit the frog green colour!.
Pass it through a coffee filter (this will take a while) to take out any impurities and it will ensure that you have a clean and beautifully coloured oil!
I would recommend you store this in the fridge in an AIRTIGHT container, this is purely to ensure that you keep the green colour and to stop it from going brown, it will never go off!.
Its great to add to pastas, or salads or any thing else you had planned for the original oil, but its just a variation that I would recommmend!.Www@FoodAQ@Com
