There are many variables -- ingredients, type of pan used, the depth of the cake, the psi setting, etc!. -- but you can easily cook all kinds of cakes and breads in a pressure cooker!.
From sponge cakes, cheesecakes, fruitcakes, nut breads, carrot and zucchini bread, and even a double chocolate cake, can be cooked in the pressure cooker!. The cakes should be dense and moist, even fruitcakes, but if they are hard its usually due to user error with over-cooking being the most likely cause!.
For best results, use a covered metal or silicone tube, or bundt-type pan, to get the maximum heat conductivity!. First, the cake needs about a 10 minute period of steaming without pressure to allow it to rise!. After steaming, most single layer, plain cake recipes will cook in about 20 minutes!. Follow this with the natural release method!.Www@FoodAQ@Com
