Cake help?!


Question: Cake help!?
i cooked a cake in my pressure cooker!. it turned out very well!. but was a bit hard as like other fruit cakes!. now i want to have a little softer version so that i can apply the icing, like the one's u get in the market as "cream cakes"!. they are really soft!. how can i do that!?Www@FoodAQ@Com

There are many variables -- ingredients, type of pan used, the depth of the cake, the psi setting, etc!. -- but you can easily cook all kinds of cakes and breads in a pressure cooker!.

From sponge cakes, cheesecakes, fruitcakes, nut breads, carrot and zucchini bread, and even a double chocolate cake, can be cooked in the pressure cooker!. The cakes should be dense and moist, even fruitcakes, but if they are hard its usually due to user error with over-cooking being the most likely cause!.

For best results, use a covered metal or silicone tube, or bundt-type pan, to get the maximum heat conductivity!. First, the cake needs about a 10 minute period of steaming without pressure to allow it to rise!. After steaming, most single layer, plain cake recipes will cook in about 20 minutes!. Cream Bundt Cake

"Great tasting glazed Bundt cake with Irish cream baked in!. Excellent for any time or any occasion!."


INGREDIENTS
1 cup chopped pecans
1 (18!.25 ounce) package yellow cake mix
1 (3!.4 ounce) package instant vanilla pudding mix
4 eggs
1/4 cup water
1/2 cup vegetable oil
3/4 cup Irish cream liqueur
1/2 cup butter
1/4 cup water
1 cup white sugar
1/4 cup Irish cream liqueur


Method
1) Preheat oven to 325 degrees F (165 degrees C)!. Grease and flour a 10 inch Bundt pan!. Sprinkle chopped nuts evenly over bottom of pan!.

2) In a large bowl, combine cake mix and pudding mix!. Mix in eggs, 1/4 cup water, 1/2 cup oil and 3/4 cup Irish cream liqueur!. Beat for 5 minutes at high speed!. Pour batter over nuts in pan!.

3) Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean!. Cool for 10 minutes in the pan, then invert onto the serving dish!. Prick top and sides of cake!. Spoon glaze over top and brush onto sides of cake!. Allow to absorb glaze repeat until all glaze is used up!.

5) To make the glaze: In a saucepan, combine butter, 1/4 cup water and 1 cup sugar!. Bring to a boil and continue boiling for 5 minutes, stirring constantly!. Remove from heat and stir in 1/4 cup Irish cream!.

Coconut Cream Cake

"An easy cake using a white cake mix, and moistened with a creamy coconut sauce!. You may reduce the amount of sauce if you prefer, and it will still be delicious!."


INGREDIENTS
1 (18!.25 ounce) package white cake mix
3 eggs
1/3 cup vegetable oil
1 cup water
1/2 teaspoon coconut extract
1 (14 ounce) can coconut cream
1 (14 ounce) can sweetened condensed milk
1 cup heavy whipping cream
1 tablespoon white sugar
1 cup flaked coconut


Method
1) Preheat oven to 350 degrees F (175 degrees C)!. Grease and flour a 9x13 inch pan!.

2) In a large bowl, mix together cake mix, eggs, oil, water and coconut flavoring!. Beat for 2 minutes and pour into 9x13 inch pan!. Bake for 30 minutes, or until a toothpick inserted into the cake comes out clean!.

3) In a medium bowl, combine coconut cream with sweetened condensed milk and stir until smooth!. When cake comes out of the oven, poke holes into it in even rows using a large fork or chopsticks!. Pour milk mixture over, allowing it to soak into the cake!. Refrigerate for several hours or overnight!.

4) In a large bowl, whisk cream until soft peaks form!. Add sugar and continue whipping until stiff!. Spread over cooled cake!. Sprinkle top with flaked coconut!.Www@FoodAQ@Com

This is the first time I have ever heard of anyone cooking a cake in a pressure cooker!. The only way I have ever cooked a cake is in the oven in cake pans or pound cake pans!.

I would be interested to know where you got a cake recipe telling you to cook it in a pressure cooker!. You have really gotten my curiosity whirling!Www@FoodAQ@Com

Thai is the recipe for making forest cakes:
150g dark cooking chocolate
150g butter, soft
150g Castor sugar
6 eggs, separated
150g self-raising flour
pinch of salt
250ml cream
