Makes: 8 servings!.


3 cups reduced calorie cranberry juice cocktail, divided
1 pkg!. (4-serving size) JELL-O Brand Cranberry Flavor Sugar Free Low Calorie Gelatin
1 cup cold evaporated fat free milk


BRING 1-1/2 cups of the juice to boil in small saucepan!. Stir into gelatin in large bowl at least 2 minutes until completely dissolved!. Stir in remaining 1-1/2 cups juice and milk!. Pour into 13x9-inch pan!. Freeze 1-1/2 hours or until frozen 1 inch from edges!. Spoon mixture into food processor container; cover!. Process until smooth!. Pour into bowl; cover!.
FREEZE 3 hours or until firm!. Spoon or scoop into dessert dishes!. Store leftover sorbet in freezer!.

Diabetic Ice Cream
8 ounces Pet Lite Milk
4 packs sugar substitute
1 teaspoon vanilla extract

Add one of the following:

2 ripe peaches, peeled and diced
1 banana, mashed
4 slices pineapple with juice
8 ounces orange juice
2 cups strawberries, crushed
2 cups raspberries, crushed

Mix all together and put in freezer of refrigerator until hardened!. Remove; break up!. Put into blender and whip until creamy!.

Serve!.

This can also be made in a small electric machines, or one that goes in the freezer!.

Strawberry Sorbet

1 pint strawberries -- fresh *
1/4 cup honey
3/4 cup orange juice
egg whites
1/2 cup milk
1 tablespoon honey
or fresh raspberries ( about 2 cups)

Remove hulls from berries!. In a blender container, place berries, orange juice, milk, and 1/4 c honey!. Cover; blend 1 minute or until smooth!.

(If desired, strain raspberry mixture to remove seeds!.) Pour mixture into 9x9x2-inch pan!. Cover; freeze 2 to 3 hours or until almost firm!.

In a mixer bowl beat egg whites with electric mixer on medium speed until soft peaks form!. Gradually add 1 T honey, beating on high speed until stiff peaks form!. Break frozen mixture into chunks; transfer frozen mixture to chilled large mixer bowl!. Beat with electric mixer until smooth!. Fold in egg whites!. Return to pan!. Cover; freeze 6 to 8 hours or until firm!.

To serve, scrape across frozen mixture with spoon and mound in dessert dishes!.Www@FoodAQ@Com
