Banana-Chocolate Cupcakes-
Ingredients:
1/4 cup butter or margarine, softened
1 1/2 cups sugar
2 large eggs
3 small bananas, mashed (about 1 cup)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/8 teaspoon salt
1/3 cup buttermilk
1 cup (6 ounces) semisweet chocolate morsels
Vegetable cooking spray
1 (16-ounce) container vanilla frosting (optional)
Preparation:
1!. Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well!. Add eggs, banana, and vanilla, beating until blended!.
2!. Stir together flour, soda, and salt!. Add flour mixture to banana mixture alternately with buttermilk, beginning and ending with flour mixture; beat at low speed until blended after each addition!. Stir in morsels!.
3!. Place paper baking cups in muffin pans, and coat with cooking spray; spoon batter into pans, filling cups two-thirds full!.

This is a recipe from my church cookbook that I've used a lot for birthdays!. It's still fast and easy because of using the boxed mix, but the homemade filling makes it really special and tasty!

1 pkg!. chocolate cake mix
1 8oz!. pkg!. cream cheese, softened
1 cup semi-sweet chocolate chips (I really like to use the mini chocolate chips)
1/3 cup sugar
1 egg
1/2 tsp!. vanilla
dash of salt
Mix cake mix according to package directions!. Fill paper baking cups in muffin pans 2/3 full!. Cream the cheese with the sugar; beat in egg, vanilla, and salt!. Stir in chocolate chips!. Drop 1 rounded teaspoon of the cheesecake mixture into each cupcake!. Bake as package directs!.
