Answers:
You can use a little water instead of milk!.Sparkling water,(soda water) will make a fluffier omlette!.
One of our favorite omlettes is using left over veggies form the dinner last night!.Onions, mushrooms, potatoes, brocolli and red bell peppers are great!.Add some Tabasco to the eggs before cooking for a little kick and top it with fresh salsa and guacamole!.Delish,enjoy!.Www@FoodAQ@Com

yes, definitely!. Actually, milk is not even used !. the French and most chefs make their omelettes with just a little water
( 2 eggs plus 1 T!. water, s and p!. If you want the omelet itself to have more flavor, you can add herbs or spices (thyme, oregano, basil, chili powder , garlic powder are examples) or hot sauce!.

but even better is to put the punch into the filling of the omelet!.
think of an omelette as the bread in a sandwich; anything you can put in a sandwich you can put in an omelet (although I don't think you'd want a tuna salad omelet!.) suggestions: sauteed onions, grated cheese, chopped cooked bacon or ham, sauteed mushrooms, cooked spinach, cubed cooked potatoes, avocado, chopped tomatoes, even chili!.
whether you put fillings in your omelet or just have it plain, the idea is to whisk your eggs and water really hard for 20!? seconds, til they're frothy, and immediately pour the egg mixture into your hot buttered skillet!. the omelet should cook very quickly; as it begins to set, you lift the edges and let the runny uncooked egg run underneath and cook!. as soon as it isn't 'raw egg' on top, you can fold it over and slide it out onto your plate!. if you use a filling, top the cooked omelet with the filling, fold it over and leave it to heat/melt in the skillet and then slide it out!.

if you use a filling like chili or mushrooms, it's better if they're already hot when you put them in the omelet!.

also, you don't want to overcook your omelet or it will be tough and dry!.Www@FoodAQ@Com

Omelets are not made with milk!.

You can add fried potatoes, cooked leftover spaghetti (yes, with the spaghetti sauce mixed with it too), cheese, hot peppers, fresh herbs, onions, tomatoes, bacon, pepperoni, blanched veggies!.

I like to put a few slices of garlic in my oil and cook it for a few seconds, then take out the garlic before putting in the beaten eggs!.Www@FoodAQ@Com

you can mix the eggs with out anything added!. you can add spices of what you like in the mixture if you like!. and i would use hot stuff cayenne pepper but not much for taste!. you then get pan hot with little olive oil pour the eggs mashed in the pan and it will do the bottom of whole entire pan!. you then put chopped ham and cheeze in it with big flipper take part of the mixture of egg flip it over half of the stuff and cook it then low heat and turn it over and there is omelett!. presto!.Www@FoodAQ@Com

Pour into skillet (non-stick) or melt a little butter in the bottom
Sprinkle on top of egg, what ever you like:

***Some people like salsa on top of their eggs!.
***A little tip to cook the egg faster without it browning to much!. Place an ice cube in the side of the pan and cover with a lid!. The egg will steam and cook quicker on the top!.Www@FoodAQ@Com
