Question: Alcohol Based Marinade/Sauce for Chicken!.!.!.!.Where's Alton Brown when you need him!?
Can you marinate meat, particularly chicken, in an alcohol based sauce!? Will the alcohol break down the fibers of the meat or anything!? Can white or dark liquors be used (Jack Daniels Whiskey or Absolut Vodka)!? Any good suggestions or recipes!?!?!? please helpWww@FoodAQ@Com


Answers:
i like to marinate my chicken with bourbon and brown sugar or with some tequila and orange juice!. Keep in mind that alcohols BURNS so be prepared for a flare up on the grill when you put the meat on the grill!.

If you make a little extra marinade and keep aside, it makes a great basting liquid!. DO NOT use the leftover marinade the chicken sat in because there's way too much bacteria in it to re-use!.Www@FoodAQ@Com

Alcohol makes a good marinade, just don't keep the meat in the marinade too long, or it will start to break down and "cook the meat!. Jack Daniels actually makes a good bar-b-que marinade already done!. It's where the ketchups are in the grocery store!.Www@FoodAQ@Com

Sherry or dry white wine make the best marinades!.Www@FoodAQ@Com
