What's a fresh, tasty, and a little different chicken salad recipe?!
Tonight my boyfriend and I are in the mood for a nice chicken salad!. However, we want something a little different!. We already have the chicken and veggie lovers salad blend along with various salad dressings, tomatos, onions, and bacon bits!. What are some unique twists on a chicken salad involving cheap ingredients, or some things that are in an average household!?Www@FoodAQ@Com

Curried Chicken Salad with Cashews and Dried Cranberries:
To your favorite "basic chicken salad recipe" (chopped chicken, mayo, onion, celery, etc) Add to that mixture:
1/2 cup honey roasted cashews
1 Tablespoon Mild Curry Powder
1/3 cup dried cranberries (think: Craisins)
Mix all together, and refrigerate for at LEAST 1-2 hours, to let the flavors meld together)
In a 2 large salad bowls, add your choice of mixed greens, and serve the chicken salad on top of the greens!.!.!.!.
See how easy!?!? BTW, the Curried Chicken Salad can be made up to 2 days in advance, covered in a food storage container and refrigerated!.
You can also make great pita (the pocket bread) sandwiches with the Chicken Salad alone, and the pocket bread keeps the mixture from falling out of the bread!.!.!.!.Enjoy!!

CHICKEN WALDORF SALAD WITH EQUAL
52% calorie reduction from traditional recipe!.
2 cups cubed or shredded cooked chicken breast
2 cups chopped cored Red Delicious apples
1 cup sliced celery
2/3 cup halved seedless grapes
1/4 cup chopped toasted pecans
1/2 cup fat-free mayonnaise
1/2 cup fat-free sour cream
3 to 4 teaspoons lemon juice
2 teaspoons Dijon-style mustard
1/3 cup Equal? Spoonful*
Salt and pepper, to taste
Red leaf lettuce
Chopped pecans (optional)
Combine chicken, apples, celery, grapes and 1/4 cup pecans in bowl!. Blend mayonnaise, sour cream, lemon juice, mustard and Equal?; stir into chicken mixture!. Season to taste with salt and pepper!.
Spoon salad onto lettuce-lined plates: sprinkle with additional chopped pecans, if desired!.
Variation:

3 boneless, chicken breast halves - cooked, skinned
3 ounces pineapple tidbits, juice reserved
2 small Gravenstein apples, peeled, cored and diced
3/4 cup chopped celery
1 (3 ounce) can mandarin oranges, drained
1 cup mayonnaise
1/2 teaspoon almond extract
DIRECTIONS
Cook macaroni in a large pan of boiling water until al dente!. Drain, and rinse!. Set aside!.
Place nuts in a dry skillet!. Toast over medium heat, turning frequently, until nuts are fragrant and lightly browned!.
In a large bowl, combine pasta, chicken, pineapple, apples, celery, mandarin oranges, and toasted nuts!.

One of my favorites was actually discovered by my mom in our grocery store!. After a while and a couple tries I was able to re-create it!.
Take 1-2 lbs of chicken (either canned or grilled and then cut up) and add to it:
- 1 TBL lemon juice
- about 2 cloves garlic
- 2 TBL olive oil
- Celery (depends on how much you want)/Celery seed to taste
- 1/2 cup miracle whip dressing
- mix in toasted almonds
- salt and course pepper to taste
I prepare the chicken, lemon juice, oil, garlic in a food processor!. This allows me to add add'l ingredients to get the consistency or taste you want!. Once done, mix in the celery/celery seed, almonds and miracle whip!.
If you are not big on the miracle whip, do 1/2 miracle whip and 1/2 balsamic vinegar to mask the taste!. Serve on toasted bun or croissant!. Enjoy!!!!
