Question: How do you make pudding without baking soda!?

yep!.!.!.you use cornstarch! heres a couple recipes

Homemade Chocolate Pudding

1/2 c!. cocoa
1 c!. sugar
1/2 c!. powdered milk
1/2 tsp!. salt
4 c!. water
4 tbsp!. cornstarch
1/2 tsp!. vanilla
3 tbsp!. butter

Mix first 6 ingredients together!. Cook in microwave stirring every once in a while until thick!. When done, add vanilla and butter!.

Homemade Vanilla Pudding

2 tbsp!. cornstarch
Sprinkle of salt
3 egg yolks
1/2 c!. sugar
3 1/4 c!. milk

Cook until it boils, stirring constantly!.

I wonder what kind of pudding you were thinking of!? Never heard of baking soda in pudding!. If by chance you are talking about corn starch, you can make pudding without that as well!. You can easily sub 2 T!. flour!. Puddings are thickened either by a starch (like corn starch) or by gently cooking eggs, tempering them!.

Lowfat Chocolate Pudding
1/2 cup sugar
6 tablespoons unsweetened cocoa
3-1/2 tablespoons cornstarch
1 cup evaporated skim milk
2 cups nonfat milk
1 teaspoon salt

Combine sugar and cocoa powder in medium saucepan and set aside!.
Dissolve flour in nonfat milk!. Gradually whisk milk and cornstarch mixture into saucepan, whisking until blended and free from lumps!.
Add the evaporated milk and stir!. Cook, stirring constantly, over medium heat until the mixture thickens and boils!. Simmer for two minutes, stirring!. Remove from heat!. Add vanilla!.
Pour through a strainer into 6 small bowls and refrigerate for several hours or until firm!.

Makes approximately 6 half-cup servings!.

Baked Vanilla Custard

3 eggs, slightly beaten
1/4 c!. sugar
1/4 tsp!. salt
1/2 to 1 tsp!. vanilla
2 c!. skim milk, scalded
Ground nutmeg for garnish

Combine first 4 ingredients, beating well!. Gradually add milk, stirring constantly!. Pour into 6 (6 ounce) custard cups!. Sprinkle with nutmeg!.

Place custard cups in a large baking pan; pour hot water into pan to a depth of 1 inch!. Bake at 325 degrees for 40-45 minutes or until knife inserted halfway between center and edge of cup comes out clean!. Remove cups from water and cool!.
