Question: Ingredient in Rachael Ray recipe!?
Hey guys, I am trying to make the Chicken, Chorizo and Tortilla stoup recipe but I can't seem to find the kind of Chorizo Rachael uses in her recipes, does anyone one the kind she uses and maybe a brand!?!. All I find is the Mexican chorizo which is like ground pork or beef and nothing like the one she uses on the 30 minute meals!. Help!?Www@FoodAQ@Com

The chorizo she uses is a Spanish style chorizo that is cured (it's more like a pepperoni in that respect)!. There is also a Mexican chorizo that is fresh and more like the ground pork like you said!. If you live on the west coast you are more likely going to find this type and on the east coast you will probably find more of the type she uses!. Try asking for it at a specialty foods store like Whole Foods!. They should have it!. BTW, I would not interchange the two types!.Www@FoodAQ@Com

Chorizo sausage is what you normally see her use it is usually pre-cooked in sausage form and needs only to be heated!. In well stocked grocery stores it would be found near the brats, polish sausage, and Italian sausage area of the meat department!. You may need to find a specialty meat store with a butcher to find it if your grocery store is small!.
You can go ahead and use the ground type of sausage you can find,just pre cook it slightly and drain the excess fat!. once it is cooled add it to your recipe as called for,!.!.only the shape will look different, the taste will remain the same!.Www@FoodAQ@Com

I believe its a Portugese Chorizo Rachel Ray uses!. You can probably find it in your deli section of a grocery store, or a good deli/butcherWww@FoodAQ@Com

It's either Spanish or Portugese, however any will do!.!.!.they are all so similar in taste!. Just remove the casing!. I used a Spanish type!.Www@FoodAQ@Com
