How to cook fresh green beans?!


Question: How to cook fresh green beans!?
From the garden!.!.!.
I'm used to the canned kind (blah)
How long should I cook them!?
I like the sauteed way ppl do them!.!.!. w/ the butter and onions!.!.!.or at least it seems like it was sauteed!.!.!.!.*lol
How can I do this!?
Best things to season w/ !?
I know what I used for canned g/b!.!.!. but would it take more seasoning for the fresh ones!?

I cook 'em country style!. Wash them and snap off the ends and cut or break the beans into 2-inch lengths!. Cook a piece of bacon/hog jowl/fatback/ham in a small pot for a few minutes and add about 1/4 cup chopped onion!. Put the beans in the pot and add approximately 1/4 teaspoon salt and enough water to cover the bottom of the pot!. Reduce heat, cover and let cook about 15 minutes!.

Taste and see what you think!. Some people add soy sauce or worcestershire sauce at this point!.Www@FoodAQ@Com

This recipe is delicious, especially if you like olives!.!.!.

1 tbsp olive oil
6 cloves minced garlic
1 tbsp butter
1 small yellow onion, chopped
1 1/2 tsp oregano
1/2 cup black olives or green ripe olives, sliced (if you use green ones, make sure they are green ripe olives, not the spanish ones!.!.!.green ripe ones taste alot like black olives only milder and with a kind of buttery flavor)
1 1/2 lb fresh green beans, trimmed
1 cup chicken broth
salt and pepper to taste

Warm oil in a large skillet, med to med-high heat!.
Add garlic and let cook for one minute, then add the butter and let melt!.
Add onion and oregano and cook until onion turns clear!.
Add olives, green beans and chicken broth!.
Cook until the beans are crispy/tender, about 10 minutes, and sprinkle with salt and pepperWww@FoodAQ@Com

Garlic-Buttered Green Beans

INGREDIENTS
1 pound fresh or frozen green beans
6 tablespoons butter or margarine
2 teaspoons onion powder
1 teaspoon garlic powder
salt and pepper to taste

Cook green beans in water to cover until crisp-tender!. Meanwhile, in a skillet, saute mushrooms in butter until tender!. Add onion powder and garlic powder!. Drain beans; add to skillet and toss!. Season with salt and pepper!.

Of course, if you don't like mushrooms then just melt your butter and other seasoning in a skillet, drain your beans and add to the skillet!. I like to add chopped bacon and a tablespoon or two of chopped onions!.Www@FoodAQ@Com

Trim up your beans and place them in a large saute pan with 1/2 cup chicken broth and 1/2 tsp seasoned salt!. Cook until crisp tender!. Toss with melted butter, 1 tsp lemon zest and 1 T lemon juice!.

Follow the steps above, but saute 3 slices chopped bacon and 1/2 yellow onion!. Toss green beans with bacon mixture, kosher salt, and fresh ground pepper!.

Dip prepared green beans in a mixture of bread crumbs and parmesan cheese and saute until crisp and golden!. Serve with ranch dressing!.

Saute sliced mushrooms in butter and olive oil, along with minced garlic and kosher salt and fresh ground pepper!. When mushrooms are juicy, add green beans and 1/4 cup red wine!. Cover and simmer until beans are crisp tender!.Www@FoodAQ@Com

There are many ways to cook green beans but they should all start the same way!. The first thing to do is blanch the beans!. This means to par cook them and then shock them in ice water!. This retains the color and can be done a day ahead!. It is a technique that you can use with almost any vegetable!.

To blanch the beans first snap off the tips and tails!. Then bring a large pot of salted water to a boil and cook the beans for no more than 5 minutes!. They should still be quite firm!. Carefully poor into a colander!. Immediately put the beans in a large bowl full of ice and water!. This stops them cooking and they will retain their color!.

After the beans have cooled down (about 5 minutes), drain and let them dry over paper towels!. They can then be stored in the fridge in a plastic bags (with extra paper towels to absorb any excess water) until needed!.

When you are ready to continue there are so many possibilities!. One of my favorites is to place some olive oil in a saute pan with some sliced almonds!. Cook until the almonds begin to slightly change color (this releases their flavor), then toss the beans in the pan until they are coated and heated through!.

You can cook them with almost any ingredients!. For instance, instead of almonds you could use sesame seeds, or any other freshly ground spice such as coriander!. In each case let the seeds or spice cook a little to release the flavor!.

Other possiblities include onion, garlic, tomato etc!. In each case when you add the beans leave them only long enough for them to be coated and warmed through!.

Frying them is good!. With butter!. You can smash a couple garlic cloves and cook those for just a moment in the butter before adding diced onion and the green beans, then lightly season with lemon pepper and salt as beans cook!. That is one delicous way!. You can also just use garlic salt and lemon pepper!. They are also good with a dash of curry powder!. Bacon, panchetta, or procutto cooked with green beans is also fantastic!. I also like to add crumbs (or crush them) of really good croutons!.!.!.toss them in to the beans after they cook!. yum!
They can also be steamed and then tossed in melted garlic butter with the same seasonings mentioned above!. This is slightly more healthy, but as always with healthy foods, not nearly as tasty!.Www@FoodAQ@Com

My grandma's recipie!.!.!.not healthy, but very tasty!

-Wash beans, cut into one inch pieces
-Put beans into a medium saucepan
-Add milk to the saucepan until beans are just covered
-Add 2 tablespoons of butter or I cant believe its not butter per pound of beans
-Sprinkle in salt and pepper to taste
-Cook beans covered over medium heat for 20 minutes or until they reach the desired tenderness!. For this recipie it is better to cook the beans until they are very soft!.

I like to cook them a few different ways:

First diced onions some fresh ground pepper and enough olive oil to coat!. Then I saute them until crisp but well heated over medium heat and hit with a spray of I Can't Believe it's not Butter spray or similar and a shot of Season All!.

Or

I use a grill pan with holes like a colander and mix the beans in a bowl with a couple tables spoons of olive oil and minces garlic!. Then place over coals and stir frequently until well heated again!. Splash with fresh ground salt and pepper!. A great side!.

Favorite pig out food is steamed fresh green beans then a pat of real butter melted and season all seasoning!. Don't steam them too long though, just until hot and crispy!.

I always use canned green beans!. The french style ones are too stringy, so I make sure to whole whole or cut!. Just drain most of the water away and pour beans into a skillet over medium high heat!. Add a little olive oil or butter and one clove of garlic, minced!. Season with salt and pepper!. When tender transfer to a serving dish and toss with the juice of 1/2 lemon!.Www@FoodAQ@Com

The fresh ones are the best and they are easy!. All u need to do is wash them, take the each end off and steam them!. Steamiing them helps to retain the nutrients rather than boiling!. I don't remember how long but it is best to watch them any way so they are they texture you like!. I like to let mine cool and mix them with grated parmesian cheese and an oil vinigrette sauce!. steaming them is nice,they retain colour and flavour&you can cook them for as long as you want,i like them soft and tender,somelike them firmer,it depends on your taste ,i steam them for 20mins!they go really nicely with meat or in a salad!Www@FoodAQ@Com

You can just trim the ends & rinse them clean with water!.
Then place whole in a fry-pan with butter or water for less fat!.
Cook on medium heat, until just tender enough; test one!.
