Canning tomatoes. Why do you have to boil the jar for 45 mins?!


Question: Canning tomatoes!. Why do you have to boil the jar for 45 mins!?
Can't I just make my tomatoes and put them in an o pickle jar and refridgerate!? Would that work!? How long will they stay fresh!?Www@FoodAQ@Com

The processing take a long time!. There are bacterium that thrive in airless conditions and they produce a deadly nerve toxin!. Botulism toxin is destroyed by boiling, but the dormant bacterial spores are very hardy and survive prolonged boiling!. Unless they are killed by the extreme condition of a pressure cooker that reaches higher than boiling temperatures, the spores will grow into active bacteria when the jar cools down and then the toxin will accumulate!. So the extra long boiling time is needed for a water bath canner!. There are some fruits and veggies that should never be processed in a water bath canner, only a pressure canner because of this very reason!. Their high pH (low acid) is a great environment for these toxins to grow!. Follow directions carefully!.Www@FoodAQ@Com

I don't usually do them for 45 minutes (25 for pints &35 for Quarts) but there are two reasons you do them for a long time: I!. tomatoes are an acid food and that has to be cooked down and 2!.you have to build up enough pressure to seal your lid!. If you want to just put them in the fridge you have to do what is called a cold bath!. But your still out a lot of time!. First you have to bring your jars to a "boil" with hot water in them set them aside on the counter, with the water still in them and cover with a towel then You have to cook your tomatoes for anywhere from 10 to 20 minutes on a high boil then put the cooked tomatoes in the hot jars (after you pour the water out) and seal the lid tightly and invert them so all the hot liquid is on the lid, after a little while check the lid by pressing down on it if it doesn't move or if it stays down, you are sealed ,if not try heating the jar up again!. I have had cold bath tomatoes last as long as up to a year but generally they only last 6-7 months!. If they don't seal properly you can keep them in the fridge for about 2 weeks!.Www@FoodAQ@Com

Kristy -- You can cook tomatoes and put them the refrigerator in a jar or bowl covered and they will last a week or two!.
But if you are thinking about canning them to last through the winter it's a different thing
They need to be cooked and put into sterilized canning jars add 1 tea spoon kosher or canning salt and covered with sterilized lids!.

Peal and core ripe tomatoes making sure to remove any green parts of the core cut tomatoes in to quarters or smaller pieces
Bring tomatoes to a boil in a stainless steel
or an enameled pot with no chipped places in the enameled pot lower heat and simmer until done!.

Wash jar's with hot soapy water and rinse!.
Sterilize jars in boiling water until the jars are very hot making sure there is no chips on the sealing part of the jars!. In another small pot or pan sterilize the flats in very hot water no need to boil just simmer!.

When tomatoes are cooked pour into hot sterlizied jars add salt 1 tea spoon salt to each quart jar!. clean the sealing rim of jar with a damp cloth or paper towel!. Place the hot sterlizied Flat on jar!. then using the sealing ring tighten to form a tight seal!. With a damp cloth wipe outside of jar!.And place jars on a folded news paper or towel!.
Cover with a towl and let cool!. As they cool you will hear a matalic ping that is the jar and flat making a seal!. When cool enough usualy over night!. Place the canned tomatoes in a cool dark place this will protect the color!. injoy the fruits of your labor!. My wife and I canned tomatoes today
Last week I found a box of tomatoes we canned in 2000 and they were still nice and red and tasted great!. So this method does work!.Www@FoodAQ@Com

This is the way I can tomatoes!. I maybe a little more work but it always works for me!.

Peal you tomatoes and put them in pot and let them boil for bout 5 min to make sure the are good and hot!. Then I put them in my jars!. Next I go ahead and put them it the caner and cook them for about 20 min!. Just to make sure they seal!. I have no luck with them any other way they always come unsealed on me!. The jar needs to be sterilized, hence the boiling!. It will not work without being sterilized!.Www@FoodAQ@Com
