i guess it depends on what kind of recipe it is!. If it is a stir fry recipe, some people don't like to use olive oil!. If it s a baking recipe, you can use vegetable oil or canola!. If it's a salad, you can use a nice oil like extra virgin olive oil or sunflower oil!. If you list the recipe, we might be able to give you the best recommendations!.Www@FoodAQ@Com
Any kind of cooking oil will do, but it depends on what you're cooking!. It mostly has to do with temperature-based smoke points!.
Butter and margarine burn quickly (low smoke point) so they are good mostly for light sauteing!.
High smoke-point oils are good for deep frying, examples are safflower, sunflower, peanut, soy and canola oils!.
Some oils are refined / deodorized so they don't impart too much flavor to delicate dishes!. You can also use regular corn oil for this purpose as it is almost tasteless!.
Oils used specifically to impart flavor are olive oil for mediterranean recipes, and sesame oil for east-asian dishes!.

It really depends on what you are making!. I think if they truly wanted you to use olive oil, they would say so!. But if the recipe only says "oil", then you can use canola, vegetable, corn, safflower!.!.!.!.!.!.!.!.!.whatever you have handy!.Www@FoodAQ@Com
Usually, if it just says oil, they are asking for vegetable oil!. You can substitute olive oil with out much flavor change!. Other oils like sesame and sunflower are usually used in dressings and for flavor after cooking!.Www@FoodAQ@Com
