Pork Carnitas Crockpot Recipe
Ingredients
1 boneless pork roast
1 teaspoon and 1 tablespoon ground cumin
Fresh cilantro
Salt to taste
Preparation
Place pork roast in the crockpot with 1/2 cup of water and 1 teaspoon of ground cumin and a half teaspoon of salt!.
Cook on low!. Check your crockpot instructions for minimum time by weight and whether the roast is fresh or frozen!. I usually put it in the crockpot in the morning and cook all day, it won't overcook over a period of 8-10 hours!.
When done, remove roast from crockpot!.
Use a fork to pull apart the roast!. Remove and toss any visible fat!.
Finish the meat by tossing it with more ground cumin and with the fresh cilantro and salt to taste!.
Broil or fry in a non-stick pan briefly to dry it a bit and bring out the cumin flavor!.
Serving
Use as meat filling for tacos, burritos, quesadillas!.
Use as a meat topping for a salad
Low carb diets: Use a high-fiber, low-carb wrap for a burrito or quesadilla, or use as meat for a salad!.
Accompaniments: fresh pico de gallo, salsa, onions, green onions, lettuce, chopped tomatoes, chopped red or green peppers, jalapenos!.Www@FoodAQ@Com

1 1/2-2 lbs pork tenderloins, cut into 2 inch cubes
1 medium onion, peeled and sliced
1 fresh jalapeno pepper, seeded and sliced
4 slices orange rind, from half an orange (optional)
1 (12 ounce) can Dr!. Pepper cola or Mr Pibb soda or Coca-Cola
16 fajita-size flour tortillas
Pico de gallo Ingredients
1 large tomato, cored and chopped
1 medium onion, finely chopped
1/2 jalapeno pepper, seeded and finely chopped, to taste
1/2 cup fresh cilantro leaves, chopped
1 tablespoon fresh lime juice
salt and pepper
Directions
1Combine pork, onion, jalapeno, orange peel and soda in a crock pot!.
2Cover and cook on low for 8 hours!.
3Uncover and shred the meat using 2 forks!.
4Serve on flour tortillas and top with pico de gallo, if desired!.
5For Pico de Gallo:!.
6Combine all ingredients in a small bowl, seasoning to taste with salt and pepper!.
7Cover and refrigerate until ready to use; Makes 1 1/2 cups!.
8Note: also, up to 2 teaspoons each of fresh minced garlic and dried oregano can be added to taste!.
9The carnitas can be served rolled into flour tortillas or in taco shells!.
10Topping options include pico de gallo, guacamole or shredded cheese with a bit of taco sauce!.

1 bunch fresh cilantro
1 can lite beer
corn tortillas

Insert garlic cloves in roast; place in crock pot with whole pepper and half bunch of cilantro which has been chopped!. Season to taste!. Pour in beer!.

Defiantly! I love make carnitas in a crock pot!
Here is my recipe!.

5 pound pork roast
1 onion sliced
1 bell pepper sliced
2 clove of garlic chopped
1 can ortega mild chillis
olive oil
salt & pepper

Heat a skillet on med-high heat add 2 tablespoons of oil to pan, rub all sides of roast with salt & pepper and then brown on all sides!. Meanwhile add onion, pepper, garlic and chillis to crock pot set at low heat, then place roast on top and cook for 6 hours!. Then shred the pork with a couple forks!. Serve with tortillas and whatever toppings you prefer!. I always serve salsa, lettuce, sourcream & cheese!.Www@FoodAQ@Com
