Mexican Lasagna
Nonstick cooking spray
1lb ground beef round or turkey
1 (12 oz) jar chunky salsa, divided!.
6 (10”) corn (or flour) tortillas
1 (16oz) can refried beans (fat free preferred), divided
1 C reduced-fat sour cream, divided
2 C (8oz) shredded Mexican style four cheese blend, divided
Chopped fresh tomato opt!. For garnish
Chopped green onions, chopped, opt!. For garnish!.

Preheat oven to 400 F!. Mist a large skillet with cooking spray; place over medium-high heat!. Crumble in the ground meat!. Cook, stirring & breaking up lumps with a wooden spoon, until the meat browns & is cooked through!. Stir in ? C salsa!. Set aside!.
Spread remaining salsa in bottom of a 10” glass pie pan!. Top the salsa with 3 tortillas!. Spread half the beans over the tortillas, then half of meat mixture, then sour cream, 1 C cheese!. Repeat the layers, using the remaining ingredients, saving ? C of the cheese!. Cover pie pan loosely with aluminum foil!.

Bake until lasagna is hot throughout & cheese has melted 20-25 minutes!. Let it rest on a cooling rack for 5 minutes, then cut into wedges or spoon servings onto plates!. Garnish with the remaining ? C cheese, tomato & green onions!.
May change the recipe by adding a few more layers, & increasing the cooking time!.
May also garnish with fresh lime wedges & cilantro, &/or olives!. May use any shredded cheese for a different flavor!.

BreakfastS:

Stuffed Pancakes

Ingredients:
Cherry pie filling or others
whipped cream
pancakes, 2 per stuffed pancake
cherries

Take cherry pie filling and put it between 2 pancakes, kind of like a sandwich, then take whip cream and put it on top w/ a few cherries!.
No syrup required!.
For those cherry haters in the house make sure you have other canned fruits to choose from and plenty of whip cream!.

Can cut the pancakes into separate parts, to make 1 pancake look like 2 pcs of cake but that takes time!.

Overnight Oatmeal
Mix:
1 C oatmeal
1 1/2 C milk
1/2 C apple juice
1/2 -1 C dried fruit

Let sit overnight in fridge!. In morning it only takes a few min to warm

FRENCH TOAST
1/2 cup Whole Milk
1/3 cup sweetened condensed milk
1 tsp (or more you be the judge) vanilla extract
1-2 eggs
dash of cinnamon or nutmeg or try both

Fake French Toast
2 eggs
1 TBS water
1 pkt Splenda or 1 TB sugar
dash of cinnimon

Beat the eggs (by hand is fine) in a small bowl!. Add the rest and beat some more!. Spray a small fry pan with non-stick spray!. Heat on medium high until a drop of water would sizzle!. Pour eggs into pan and cover!. Cook until set!. (Covering the pan makes this light and fluffy!.)

Serve immediately with a little no sugar syrup !.!.!.optional!.!.i haven't used it!.

APPETIZERS

Cucumber dip
1 cucumber, peeled, seeded & diced
1/2 C sour cream
2 TB green onions, chopped
1 clove garlic, minced
2 TB fresh dill, chopped
1 ts lemon juice
salt & pepper to taste

Combine all & mix well!. Chill & serve!. serve with crackers!.

(I like quite a bit of salt with anything that has sour cream on or in it)

Ranch Ham Roll-Ups
2 packages cream cheese (8 oz!. each), softened
1 envelope ranch salad dressing mix
3 green onion, chopped
11 flour tortillas (8 inches)
22 thin slices deli ham

In a small mixing bowl, beat the cream cheese and salad dressing mix until smooth!. Add onions; mix well!. Spread about 3 tablespoons over each tortilla; top each with two ham slices!. Roll up tightly and wrap in plastic wrap!. Refrigerate until firm!. Unwrap and cut into 3/4-inch slices!. Yield: about 7-1/2 dozen!.

Baked Mashed Potatoes

6-7 large potatoes
1/2 lb mozzarella, cubed
3 TB grated romano cheese
1/8 lb hard salami, minced
1 stick butter= 1/2 C divided
1/2 cup milk
1/2 cup breadcrumbs
Salt and pepper

Peel the potatoes and cut into 1" chunks!. Boil until tender and drain!. Mash potatoes and add 6 TBS of the butter and then the milk!. Stir and whip until potatoes are smooth!.

Add mozzarella, romano cheese and salami!. Stir to blend!. Add salt and pepper to taste!.

Use 1 TB of the remaining butter to grease the bottom and sides of a high-sided casserole dish!. Coat the bottom and sides with breadcrumbs!. Spoon potato mixture into the dish and dot the top with the butter!.

Bake at 350° until the top is golden brown!. Be careful -- this dish is VERY hot when it comes out of the oven!

PAPAS DORADAS (Browned Potatoes)
--------------------------------------!.!.!.
6 medium-size all-purpose potatoes
2 TB unsalted butter
2 TB canola oil
Salt and freshly ground black pepper
Minced fresh parsley leaves for garnish

Peel and quarter the potatoes, or use with a melon baller to scoop them into balls!. Or, if you can find small new potatoes, scrub them well and cook them with their skins on!.

In a large, heavy skillet, heavy the butter and oil together over medium heat until the butter melts!. Add the potatoes and cook, tossing frequently, until lightly browned on all sides!. (this can take 10 min or more)Season with salt and pepper to taste!. Reduce the heat to low, cover, and cook, stirring
occasionally, until soft, about 10 minutes!.

Drain the potatoes on paper towels!. Transfer to a serving platter, sprinkle with the parsley, and serve hot!.Www@FoodAQ@Com

Luau Brownies



1/2 cup butter
1 (12-ounce) package semisweet chocolate chips
1 1/2 cups sugar plus 1/2 cup
1 1/3 cups unbleached flour
1 teaspoon vanilla extract plus 2 teaspoons
1/2 teaspoon baking powder
1/2 teaspoon salt
4 eggs plus 1 egg
1 (8-ounce) package cream cheese, softened
1 1/4 cups shredded sweetened coconut
1 cup chopped mix of roasted and salted macadamias, cashews, and almonds
1 cup canned pineapple tidbits

Preheat your oven to 350 degrees F!.

Lightly grease the bottom of a 13 by 9 by 2-inch pan!.

In a double boiler or in a large microwave-safe bowl in the microwave oven, melt and stir together butter and chocolate chips!. To the chocolate mixture add, 1 1/2 cups sugar, flour, 1 teaspoon vanilla, baking powder, salt, 4 eggs, and mix together well!.

In a separate bowl, mix together the cream cheese, 2 teaspoons vanilla, 1 egg, 1/2 cup sugar, and the coconut!.

To assemble: layer half of the chocolate batter into the pan!. Sprinkle half the nuts and pineapple on top of the batter!. Dollop the cream cheese mixture on top, and spread it out across the top!. Mix the rest of the nuts and pineapple into the remaining chocolate batter, and pour it over top of the cream cheese mix!.

Bake for about 40 minutes (check after 35 minutes)!. The top should be lightly crusted and the edges lightly browned and beginning to pull from the sides of the pan!. Cool completely in pan before cutting!.Www@FoodAQ@Com

DIRECTIONS
In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour!. In a separate dish, whisk together the milk and egg!.
Heat the oil in an electric skillet set to 350 degrees F (175 degrees C)!. Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated!.
Fry chicken in the hot oil for about 5 minutes per side, or until the chicken is cooked through and juices run clear!. Remove from the oil with a slotted spatula, and serve!.

Here is my icing recipe:
1/2 cup of butter
2 tablespoons or so of cream cheese
3 teaspoons vanilla
a teaspoon of horlicks(optional)
LOTS of icing sugar

Mix the butter, and cream cheese in a blender, until there's no lumps and it's smooth!.
Add icing sugar until it looks thick, and it doesn't taste buttery!.
Add the vanilla!. Then the horlicks!.

Here's a recipe for a yummy cheesecake that's low fat/low sugar:
Put one cup of cottage cheese and one brick (room temp) of cream cheese in a blender!. Then dissolve one pack of diet jello, any flavour that tickles your fancy, with 2/3 cup of boiling water!. Let it cool a bit, then add it to the blender!. Take mixture out of blender and fold in one tub of calorie reduced cool whip!. Put in a pie crust of your choice, refrigerate until set and enjoy!.Www@FoodAQ@Com

Caponata Picnic Sandwiches

1/4 cup olive oil
1 celery stalk, chopped
1 medium eggplant, cut into 1/2-inch pieces
Salt
1 red bell pepper, cut into 1/2-inch pieces
1 medium onion, chopped
1(14 1/2-ounce) can diced tomatoes
3 tablespoons raisins
1/2 teaspoon dried oregano leaves
Freshly ground black pepper
1/4 cup red wine vinegar
2 teaspoons sugar
1 tablespoon drained capers
1 loaf ciabatta bread, cut crosswise into 6 equal pieces
2 garlic cloves, peeled
6 slices (1/3-inch-thick) drained fresh water-packed mozzarella

Heat 1/4 cup of the oil in a heavy large skillet over medium heat!. Add the celery and saute until crisp-tender, about 2 minutes!. Add the eggplant and saute until beginning to soften, about 2 minutes!. Season with salt!. Add the red pepper and cook until crisp-tender, about 5 minutes!. Add the onion and saute until translucent, about 3 minutes!. Add the diced tomatoes with their juices, raisins, and oregano!. Season with salt and pepper, to taste!. Simmer over medium-low heat until the flavors blend and the mixture thickens, stirring often, about 20 minutes!. Add the vinegar, sugar, and capers!. Season with salt and pepper, to taste!.
Cut the bread pieces horizontally in half!. Grill the bread cut-side down on a grill pan over medium-high heat until golden, about 2 minutes!. Rub the whole garlic cloves over the toasted side of the bread!. Add a slice of mozzarella to bread bottom, spoon the caponata on top, cover with the other bread half, and serve!.

To take for a picnic: Wrap the sandwiches separately in plastic wrap or parchment paper!. Chill until ready to serve, or keep at room temperature up to 1 hour!.Www@FoodAQ@Com

Grilled Pork Tenderloin with Balsamic Reduction

The balsamic reduction tastes like a complex French sauce, and is so easy to make!. If you don't have the flavored balsamic use regular!.!.it is just as sweet and good!. I made it for the German Band when they were here in December and they took the recipe home with them!.!

Oh!.!.!.and salt!.!.!.never use table salt!.!.get rid of the nasty stuff!. Use Kosher or sea salt!.

Did you ever do a salt test!?

Take sea salt and kosher salt and table salt!. Rinse your mouth out and taste the sea salt!. It is very mild and very good!.!.!.use for table (they do have fine sea salt) and fish and delicate things)!.!.!.then rinse out and taste kosher!. Very good!.!.!.!.

then rinse and taste the table salt!. You will NEVER have it in your house again!. IT is tinny and nasty and bitter!. It really is something you season your food with !.!.so if you ever make a recipe and it doesnt taste the same!.!.!.look at the salt!. It changes it!.




Ingredients:

* 1 cup (8 ounces) Blackberry Balsamic Vinegar with Pear
season with salt and freshly ground pepper
* Two 12–14 ounce pork tenderloins
* Sour cream, for garnish
* Rosemary sprigs, for garnish

Prepare the grill!. Bring the Blackberry Balsamic Vinegar with Pear to a boil in a 2-quart saucepan over high heat!. Cook until reduced by half!. While the sauce is reducing, place the rub in a ziplock bag, and add the pork, shaking a few times until pork is covered with Pork & Lamb Herb Rub (or season the pork with salt and pepper)!. Grill over a hot fire for about 5 minutes, turning a few times to develop a nice seared crust!. Turn grill to low (if using charcoal, move pork to the side away from the direct heat) and cook, turning occasionally, for an additional 10-15 minutes!. The pork should be light pink in the center!. Transfer to a cutting board, cover with foil, and let rest for 5 minutes before slicing across the grain!.

To serve, spoon about 2 tablespoons of the balsamic reduction onto each plate, top with pork slices, and garnish with a dollop of sour cream and a rosemary sprig!.



Crab'n Cliantro stuffed Chicken Breasts

I got this from a bed and breakfast!.!.!.and I make it for company all the time!. It is absolutely AWESOME!




1/4 cup flour
6 oz cream cheese softened
3 tablespoons chopped green onion
2 tablespoons chopped cilantro
8 oz!. flaked!.!.cooked crabmeat
4 Tablespoons chopped walnuts
4 8 oz!. chicken breasts!.!.skinned and boned
1 tablespoon oil


Flour Mixture: Stir together flour salt and pepper

Filling:
Mix together cream cheese, green onion, cilantro, salt and pepper!. Then
stir in crabmeat!. Set Aside!.

Place each chicken breast between sheets of plastic wrap and lightly pound
to 1/4 inche thickness!. On top of the boned side of each chicken breast
spread filling and fold chicken in half to cover filling!.

Dredge chicken breast in flour mixture!.

In skillet heat oil until hot!. Add chicken breasts and saute for about 5
minutes or til groden brown turning once!. Reduce heat and cook uncovered
for 10-15 minutes more til chicken is tender and no longer pink!. Serves 2!.Www@FoodAQ@Com

Penne alla vodka!. My absolute favourite!. Use whole wheat penne and make a vodka sauce out of tomatoes, ham, olive oil, and, you guessed it, vodka!. The pan catches fire when you cook the sauce, very fun to do but be careful!Www@FoodAQ@Com
