Grilled Lemon Honey chicken

2 tablespoons butter or margarine
1 clove garlic, chopped
1/3 cup honey
1 tablespoon lemon juice
4 skinless, boneless chicken breast halves

Preheat a grill for medium heat!.
Melt butter in a skillet over medium heat!. Add the garlic, and cook until fragrant, 1 to 2 minutes!. Whisk in honey and lemon juice!. Reserve half for basting, and brush the other half onto the chicken breasts!.
Lightly oil the grill grate, and place chicken on the grill!. Cook for 6 to 8 minutes per side, turning frequently!. Baste often during the last 5 minutes!. Chicken is done when the meat is firm, and juices run clear!.Www@FoodAQ@Com

Marinate chicken in Italian dressing overnight add green peppers, ginger, and onions to the marinade!. Next day grill chicken or stir fry !. Heat olive oil in the pan!.
Take chicken breast and cut them into thin pieces!. dip the peices in beaten egg!. Then dip in Italian bread Crumbs!.
Put chicken in pand and cook through evenly!. (flip chicken when it looks like the chirkc is cooked halfway through)

This is a Rachael Ray recipe called Country French Chicken!. Its easy because the chicken part is made all in one pan!. 2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
Coarse salt and pepper
2 pounds boneless skinless chicken breast, thighs, or combination of both, cut into chunks
2 tablespoons butter
2 shallots, chopped
3 small carrots, peeled and thinly sliced
10 creminis, finely chopped
4 sprigs fresh tarragon, leaves removed and chopped to about 2 tablespoons
A handful flat-leaf parsley leaves, chopped
1 cup dry red wine
1 (32-ounce) can chunky-style crushed tomatoes or diced tomatoes in puree
Herb and Butter Noodles, as an accompaniment
Sugar snap peas, as an accompaniment

In a large skillet over medium high heat, warm the olive oil!. Season the chicken, brown it in the oil for 2 or 3 minutes on each side, and remove to a plate!.
Return pan to stove and reduce heat to medium!. Add butter to the pan and saute the shallots, carrots, and mushrooms!. Saute for 3 to 5 minutes until mushrooms darken and carrot bits are fork tender!. Add tarragon and parsley and stir!. Add wine and reduce liquid for 1 or 2 minutes!. Add tomatoes to the sauce and stir to combine!. Add chicken back to the pan and simmer chicken in sauce for 6 minutes or until chicken is cooked through and juices run clear!.
Serve chicken with Herb and Butter Noodles and Sugar Snap Peas!.

Herb and Butter Egg Noodles:
1/2 pound extra-wide egg noodles,cooked until just tender, about 6 minutes
2 tablespoons butter, cut into small bits
2 sprigs fresh tarragon, leaves removed and chopped to about 1 tablespoon
A handful flat-leaf parsley leaves, chopped to about 2 tablespoons
Salt and freshly ground black pepper

Toss the cooked egg noodles with butter bits and herbs in a bowl until butter melts, about 1 minute!. Season noodles with salt and pepper!. Yield: 4 servings

Steamed Snap Peas:
1 1/2 pounds snap peas, rinsed and drained
2 teaspoons butter
1 teaspoon sugar
1/2 teaspoon (a couple of pinches) salt

Place snap peas in 1/2-inch boiling water with butter and a sprinkle of 1 teaspoon sugar!. Reduce heat to simmer!. Cover and steam snap peas 3 minutes!. Remove cover and season snap peas with a little salt!. Serve cooked snap peas with slotted spoon to allow for draining!.

Chicken Parmesan Recipe:

This recipe calls for my Basic Tomato Sauce and shows why it is an essential part of my cooking!. As you will see, Basic Tomato Sauce is great as a base for numerous pasta sauces, but it is also an essential ingredient to my Chicken Parmesan recipe!.

The traditional method for making this dish is to coat the chicken with grated Parmesan cheese and bread crumbs, hence the name!. But most of us make a different version that could be called "Chicken Mozzarella" where the chicken is coated with bread crumbs, topped with Mozzarella cheese and a basic tomato sauce, then finished with some grated Parmesan cheese!.

Both cheeses are delicious but completely different in texture and taste!. Parmesan is a hard, dry cheese made from cow’s milk and has a rich, sharp flavor!. There are Parmesan cheeses made all over the world but the best is Parmigiano-Reggiano!.

Although more expensive, this granular textured cheese whose processing method hasn't changed in the last 700 years is usually aged for 2 years!. Two reasons why Parmigiano-Reggiano has better taste and consistency than other parmesans; (1) the flavor of the milk comes from cows on strictly controlled diets, and (2) the strict production codes dating back centuries!.

Mozzarella (maht-suh-REHL-lah) is a soft white cheese with a mild flavor typically made from cow’s milk!. It came from southern Italy where it was originally made from buffalo milk!. If you are lucky enough to find real buffalo mozzarella in your local market, try it!. Although expensive, it’s like eating ice cream compared to frozen yogurt!.

Chicken Parmesan
Cooking Techniques - Saute & Bake
Serves 4

INGREDIENTS

4 individual chicken breasts (boneless and skinless)
1 cup flour with a pinch of salt and pepper added
2 eggs
2 tablespoons water
1 cup bread crumbs
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
8 oz!. Mozzarella cheese, sliced
1 1/2 cups Basic Tomato Sauce

PREP WORK

The prep for this dish is easy!. Preheat the oven to 350 degrees F!.

Next, pound the chicken breasts with a meat mallet until they are approximately 1/4 – 1/2 inch thick!.

Have your Parmesan cheese grated and on the ready!.

Finally, slice the Mozzarella cheese into 1/8 to 1/4 inch slices!.

HOW TO MAKE AT HOME

Whisk the eggs and water together in one bowl and stir the Parmesan cheese into the breadcrumbs in another bowl!.

Keeping one had for dry ingredients and the other for wet ingredients, dredge the breasts in the flour coating both sides, then the egg/water mixture, and then the parmesan/breadcrumb mixture!.

Sauté the breasts in the olive oil for one minute on each side in an ovenproof sauté pan until the breasts are golden brown!. Don’t over crowd the pan or your chicken breasts will steam and not sauté properly!. (If you don’t have an oven proof sauté (frying) pan, sauté in your pan and transfer to a casserole dish!.

Remove from heat, cover the breasts with basic tomato sauce and top with slices of mozzarella!.

Cook in oven until the chicken is done approximately 10 to 20 minutes depending on the thickness of the chicken breasts!.

Remove from oven and serve!.

I like to serve this dish with a side of spaghetti topped with some of my basic tomato sauce!. A glass of Chianti goes great with this dish!.Www@FoodAQ@Com
