I like to let my steak rest at room temperature until its no longer cool before i season and cook it!.

My steak of choice is a 1!.5 to 2 inch thick bone in rib eye, otherwise known as a cowboy steak!.

I have tried every kind of marinade out there, but my favorite seasoning is: First a light coat of quality olive oil, then mash some fresh garlic and coat the steak with it, sprinkle on a med coat of some course ground pepper all over the steak, and last but not least!. add a med coat of kosher salt just before you throw them on the grill!. I consider a hot surface to be about 8-900 degrees, but your gas grill probably only hits the 550-650degree range depending if its a propane or natural gas grill, or a inferred burner!. You be the judge

I cook my steak over the 900 degree fire for 60 seconds, turn for another 60 seconds this will sear the proteins quickly locking in all the juice!. then i move the steak over to the indirect heat side of the grill where the temperatures cook like an oven away from the fire so it don't burn!. I usually let it cook another 4-5 minutes with a small slice of white cheddar and horseradish cheese on it

take it off the grill and let rest 6-8 minutes before serving!.

If you like it rare- let it warm to room temperature, open your grill lid and start an extremely hot fire!. "Live fire" using some aged oak on top of your gas burnrer will make a more flavorful steak!. The flames should be 8-12 inches above the grill!. Sprinkle salt and pepper on both sides of your steak and sear them for just a few minutes per side, turning only once!. The outside will be slightly charred in a few places around the edges, most of the middle will be warmed but nearly raw!. I reserve this method for only the best cuts!.Www@FoodAQ@Com

Depending on the cut of steak if it is a London broil then I usually marinate it first it makes it tender!. I usually marinate it in Italian Salad dressing; if I know I am having steak for supper then in the am I put the steak in a zip lock bag with the salad dressing on it , put it in the refrigerator until I am ready to cook it that night!. If it is a New York Strip I just put spices I like on it first !. Make sure your grill is hot first before you put the steak on!. I turn the steak only once!. Sear it on one side about 3-4 deep ones
Then put seasoning on other side and cook that side on high until it reaching the color that u want and then flip it and turn to low-med and leave it and it will cook inside and lightly cook the outsideWww@FoodAQ@Com

For medium rare and thick!. crank up the heat to high and preheat the grill and slap your meat down and make it sizzle ,leave some lines on your meat!. I love mine charcol marked and medium inside!. Turn them only twice!.Www@FoodAQ@Com
