What makes my curry bitter everytime???!


Question: What makes my curry bitter everytime!?!?!?
I cooked curry sauce with the following ingredients!.
(first, I made paste with the ingredients marked with *)
However, everytime I make it, the curry sauce becomes bitter!.

-onion*
-ginger*
-cumin seeds*
-turmeric powder*
-red chili powder*
-salt
-cardamons*
-cinnamon*
-mustard seeds
-poppy seeds
-garam masala
-tomatoes
-lemon juice

I use fresh spices and ingredients, but still doesn't turn out right!.!.!.!.what makes my curry bitter!?!?!? Does anyone have some suggestions!?

Maybe you use too much ginger!?
Ginger can do that sometimes or at least it did to me once when I over used ginger and the outcome was quite bitter!.
Or it can be the mustard seeds too!.!.

What type of pot are you using!? Should have no problems with stainless steel, but aluminum, copper, or cast iron will react with acids and make a bitter, chemical taste!. That or skins of whole fruit/spices perhaps!?Www@FoodAQ@Com
