GERMANY

KOENIGSBERGER KLOPS (GERMAN MEAT BALLS)

Amount Measure Ingredient -- Preparation Method

1 lb Beef, ground
1 lb Pork, ground
1 md Onion, chopped
1/2 c Bread crumbs, dry
1 1/2 ts Salt
1/4 ts Pepper
ds Nutmeg, ground
4 Egg, separated
1 cn Broth, beef, condensed
1 c Water
1 lg Onion, peeled and quartered
1/4 c Vinegar, cider
1 tb Sugar
1 t Pickling spices, mixed

Combine ground beef and pork (I used veal too),
chopped onion, crumbs, 1 tsp of the salt, pepper and
nutmeg in a medium size bowl until blended!. Separate
eggs, putting whites into a large bowl and yolks into
a small bowl!. Cover and refrigerate the yolks!. Beat
whites until they form soft peaks; fold into meat
mixture!. Shape into 1-inch balls and place in an
electric slow cooker!. (I browned these slightly in a
skillet)!. Combine beef broth, water, quartered onion,
vinegar, sugar, pickling spices and remaining 1/2 tsp
salt in a small saucepan!. Bring to boil, lower heat
and simmer 15 minutes; strain into slow cooker; cover!.
(Do same- pour into skillet, reduce heat, cover)!. Cook
on low (190 to 200 degrees) 5 hours; remove meat balls
to a heated deep platter and keep warm!. (I cooked the
meatballs for about one hour in the skillet)!. Turn
heat control to high (290 to 300 degrees)!. Combine 1
Tbsp all-purpose flour with 2 Tbsp cold water in a
cup; stir into liquid in cooker until smooth; cover!.
Cook 15 minutes!. Beat the saved egg yolks with a fork;
beat in 1 cup of hot sauce; return to cooker; cook 5
minutes; then pour over meat balls!. (Increase heat,
add flour & water mixture and simmer until thickened!.
Follow above instructions for adding the egg yolks)!.
Garnish with lemon slices and capers; serve with

CHINA

Chinese Potato Salad

5-6 medium potatoes (about 2 1/2 pounds)
4 slices bacon, well-cooked and crumbled
3/4 cup chopped bok choy
1 red pepper, diced
1/2 cup chopped green onion
1/4 cup chopped celantro

Sauce
1 1/3 cup mayonnaise
1 tsp sugar
1 tbs soy sauce
1-2 tsp sesame oil
1/8-1/4 tsp hot mustard powder
1/8 tsp salt

Boil the potatoes until cooked but still firm!. Cut into potato
salad-sized chunks!. Mix the ingredients for the sauce together,
using more or less sesame oil and host mustard according to taste
(the more the better, up to a point!.!.!.)!. Put all solid ingredients
together in a large bowl, then add the sauce and mix well!. Chill!.

Moroco

Title: Carrot, Orange & Radish Salad
Categories: Salads, African, Moroccan, Vegetables
Yield: 6 servings

1 lb Carrots, peeled & shredded 2 tb Lemon juice
1 lg Onion, cut into bite-sized 2 tb Orange juice
-- chunks 1 ds Orange-blossom water
3/4 c Radishes, thinly sliced 1 ds Cinnamon
1/2 c Cilantro, chopped Salt & pepper
3 tb Olive oil Pita wedges

Combine carrots, oranges, radishes & cilantro in a salad bowl!. Whisk
together the olive oil, juices, water, cinnamon, salt & pepper & pour over
the salad!. Cover & chill!. Serve garnished with pita wedges!.


IRELAND

WICKLOW PANCAKE (IRISH)

600 ml Milk
4 oz Fresh breadcrumbs
1 tb Parsley, chopped
1 pn Chopped thyme
2 tb Chopped chives or scallions
1 x Salt and pepper
2 tb Butter

* Or six small ones!. -- Beat the eggs lightly, then
add the milk, breadcrumbs, herbs and seasonings, and
mix well!. Heat 1 tablespoon of the butter in a pan
until foaming, then pour in the mixture and cook over
a low flame until it is brown underneath and just set
on top!. Put under the grill to finish!. Serve cut
into wedges with a knob of butter on each portion!.Www@FoodAQ@Com

Escamocha (spelling) from Mexico, translation is left overs

2 lbs cut up fruit (what ever you like in a fruit salad)
1/2 cup sweetened condensed milk
1/4 cup orange juice (or what ever juice you have on hand, that matches the fruit you put in)
mix sweetened condensed milk and juice, pour over fruit!. Just before serving, stir in your favorite granolaWww@FoodAQ@Com

if you want the recipes you will have to source that yourself,i dont want to be typing all night!.!.but i can guide you,indian cuisine is nice,look at the differant styles between north and south!.!.thailand has some great food!what about some french canadian pork tourtiere or pea soup!.!.for dessert maybe,baklava from greece,bananas foster for the aussies!.!.
