I've used this recipe for years and it makes better fudge brownies than any other I've tried!. I got it from a magazine article about Katherine Hepburn!. She gave this recipe in the article:
1!. Melt together 1 stick butter and 2 squares unsweetened chocolate and take the saucepan off the heat!.
2!. Stir in 1 cup sugar, add 2 eggs and 1/2 teaspoon vanilla, and beat the mixture well!.
3!. Stir in 1/4 cup all-purpose flour and 1/4 teaspoon salt!. (In the original recipe, 1 cup chopped walnuts is added here as well!.)
4!. Bake the brownies in a buttered and floured 8-inch-square pan at 325°F for about 40 minutes!.
You can cut these brownies into squares, once they have cooled, and eat them out of the pan, but it is so much nicer to pile them on a fancy plate, from which people are going to eat them with their hands anyway!. If you want to smarten up your act you can put a square of brownie on a plate with a little blob of créme fra?che and a scattering of shaved chocolate!.Www@FoodAQ@Com

6 ounces fine-quality bittersweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
1 1/2 sticks (3/4 cup) unsalted butter
1 1/2 cups sugar
2 teaspoons vanilla
4 large eggs
1 teaspoon salt
1 cup all-purpose flour
1 cup semisweet chocolate chips
Dir:
In a metal bowl set over a pan of barely simmering water melt the bittersweet chocolate and the unsweetened chocolate with the butter, stirring until the mixture is smooth, remove the bowl from the heat, and let the mixture cool until it is lukewarm!. Stir in the sugar and the vanilla and add the eggs, 1 at a time, stirring well after each addition!. Stir in the salt and the flour, stirring until the mixture is just combined, and stir in the chocolate chips!. Pour the batter into a well-buttered and floured 13- by 9-inch baking pan, smooth the top, and bake the mixture in the middle of a preheated 350°F!. oven for 25 to 30 minutes, or until a tester comes out with crumbs adhering to it!. Prepare pudding mix according to package directions using the 2 cups milk!. Whisk in the cake mix!. Stir in the chocolate chips!. Pour batter into the prepared pan!.
Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes or until the top springs back when lightly touched!. Dust with confectioners' sugar!. Serve with ice cream if desired!.
