What to do with a pork roast??!

Question: What to do with a pork roast!?!?
i have a pretty good sized pork roast i would like to cook this weekend for dinner!. normally, i would put it in the crockpot all day and make pork bbq out of it!. however, i'm getting tired of that!. i've also tried cooking one with veggies and it seemed like the veggies turned out greasy!.

anyone have any GOOD recipes for a pork roast!? there will be a smaller child here next weekend, so it can't be anything spicy and i'd prefer nothing too complicated!

thanks for your help :)Www@FoodAQ@Com
