Muffin recipes?!


Question: Muffin recipes!?
i need a recipe of chocolate muffins!.

everythime i make chocolate muffins they go hard and crunchy and thats not normal, is there any recipes you know of that stop them from going hard!.

like the muffins you can buy from the bakery!.

any recipes will do!.

* CHOCOLATE CHIP MUFFINS *


250g plain flour

2 teaspoons baking powder

Half-teaspoon bicarbonate soda

2 tablespoons best quality cocoa

175g caster sugar

150g chocolate chips (plus more for sprinkling later)

250ml milk

90ml vegetable oil

1 large egg

1 teaspoon real vanilla extract

Preheat the oven to 200C and fill a 12-bun muffin tray with paper cases!.

Weigh out the dry ingredients into a large bowl!. Pour all the liquid ingredients into a measuring jug!.

Mix both together – it will be a runny batter - then spoon into waiting muffin cases!.

Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are risen and springy!.

Makes 12

CHOCOLATE MARBLE MUFFINS

2 cups self-rising flour
1 cup sugar
half bag of chocolate chips
half bag of white chocolate chips
3 teaspoons melted butter
1 cup milk
1 egg

Preheat oven to 350°F (180C) degrees!.
Sift flour!. Add sugar and chocolate chips (including white)!. Beat egg!. Combine egg, milk and butter!.

Stir until all mixed but if stirred too much it will not rise! Pour into muffin tray!.

Bake for 15-20 mins!.

DOUBLE CHOCOLATE MUFFINS

2 c!. flour
3/4 c!. cocoa powder
1 c!. sugar
1 tbsp!. baking powder
1 lg!. egg
1 c!. milk
1/2 c!. "Shedd's Spread Country Crock"
1 1/2 c!. mini chocolate chips

In large bowl combine flour, sugar, cocoa and baking powder!. In medium bowl whisk egg, milk and melted spread!. Pour liquid ingredients into dry!. Add chocolate chips, stirring until mixed!. Spoon batter evenly into 12 greased 2 inch muffin pans!. Bake in preheated 400 degree oven for 20 minutes!.
(Cupcake liners may be used in place of greasing pans!.)Www@FoodAQ@Com

Don't leave them out make sure you put them in a plastic bag so they don't lose their moisture!.

Chocolate Chip Muffins
1 cup self-rising flour
1/4 cup granulated sugar
1 egg, beaten
1/2 cup milk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/4 cup semisweet chocolate chips
1/4 cup chopped walnuts
Sifted confectioners’ sugar

Combine flour and sugar in a mixing bowl; make a well in center of mixture!. Combine remaining ingredients except for confectioners' sugar; add to dry ingredients, stirring just until moistened!. Spoon into greased and floured 1 1/2-inch muffin pans, filling about two-thirds full!. Bake at 400 degrees F for 12 to 14 minutes or until edges are lightly browned!.

Remove from pans; sprinkle with confectioners' sugar!.

Be very careful when you are making muffins to stir them as LITTLE as possible!. Go slowly and sort of fold the batter into itself!. Then the second it looks mixed (even if it's still a bit lumpy) stop!. They will further mix in the oven!.

Make sure to use enough oil, butter, or substitute like applesauce or pumpkin (if you're doing low fat/fat free)!. This makes your muffins moist!. Those bakery muffins are LOADED with fat!. That's what keeps them (along with the preservatives) so soft and moist!.Www@FoodAQ@Com

I think the reason they go hard is because you're making them from scratch and therefore they dont have any preservatives in them,
I dont know that you're gonna find a recipe to stop them going hard unless you put preservatives in!.Www@FoodAQ@Com
