My neighbor friend just brought me a lot of eggs and need a good, different recipe using eggs. Can you help?!

Roasted-Vegetable Strata
Biscuits
3 1/3 cups Bisquick mix
1 cup milk
1 teaspoon dried rosemary leaves, crumbled
1 clove garlic, finely chopped

4 eggs
3 cups milk

8 medium green onions, sliced (1/2 cup)

Heat oven to 450°F!. In large bowl, stir biscuit ingredients until soft dough forms!. Drop dough by heaping tablespoonfuls onto ungreased cookie sheet!. Bake 8 to 10 minutes or until golden!. Meanwhile, in large bowl, beat eggs, milk, oil and pepper with wire whisk or electric mixer on low speed until blended!. Break biscuits into random-sized pieces; spread in ungreased 13x9-inch (3-quart) glass baking dish!. Pour egg mixture over biscuits!. Sprinkle with onions and cheese!. Cover; refrigerate at least 8 hours but no longer than 24 hours!. In 15x10- or 13x9-inch pan, stir together roasted vegetable ingredients!. Bake 15 to 20 minutes, stirring occasionally, until vegetables are crisp-tender!. Cover; refrigerate!. When ready to bake, heat oven to 350°F!. Stir biscuit mixture in dish!. Top with vegetables!. I made tonight a BIG omelet!. In Italian it's called " FRITTATA" Look it up on the Internet!. I put peppers, asparagus and onions in mine! You have to cook the asparagus first!.(boil them) and then you crack open 12 eggs and whisk it!. Put salt, garlic, onions, peppers, and Parmesan cheese in it!. WHISK good! Then get skillet or frying pan, put olive oil on bottom!. Put the egg mixture in pan!. Let it cook good and then you can put in in oven to let the top cook!. My mother-in law flips it in another dish!. I can't do it!. But this egg dish is so good!. And then cut pieces like pizza slices!. YUMMY!
