In addition to flavor enhancement salt also has a chemical role!. Salt affects the fats in the dough and changes the mouth-feel, i!.e!. makes it feel less "greasy"!. Salt also improves the texture by strengthening the gluten protein in the dough!.Www@FoodAQ@Com

The human tongue is capable of tasting really only 5 flavors: Sweet (Sugar), Sour (Acids), Bitter (Alkalines), Savory (MSG), and Salty!.
Think of the tastebuds as little locks, and each of these compounds is like the chemical key to these locks!. If you don't have the right key, then no taste can come in through the tongue!. But, if say a molecule of salt bonds to another flavor molecule such as one from the vanilla in your cookie, the salt will "unlock" your tastebud, allowing the flavor from the vanilla to also be read by the tastebud!.
Which is why foods that are not seasoned properly with salt will never taste right!. They will always be flat and dead!.
