Answers:
It is there for both taste and for use as a preservative!. That being said, soy sauce is a great source for salt in all kinds of sauces and marinades!. Try adding it instead of salt and it imparts flavor beyond the simple addition of salt!.

For example, to make a marinade for white fish (Tilapia is inexpensive and tasty when prepared this way), combine the juice from 1 small orange, 2 lemons, 2 limes, 6 TBSP of honey, 2 TBSP of soy sauce, 4 cloves of minced garlic, and a tsp of fresh ground pepper in a bowl and whisk well!. Put it in a bag with the fist and marinate for 2 hours in the fridge!. Place on a baking sheet and bake at 350F for 30 min and you will have a sweet/tart fish dish that is sure to please!Www@FoodAQ@Com

Well after a quick search the salt is used as a preservative!. And since it's something that is fremented a perservative is probably very important to keep it where it is as far as fermentation!.

Does that kinda make sense!?Www@FoodAQ@Com
