Recipe ideas for cucumbers (something other then pickles please)?!
I'm overloaded!.!.!.they are coming out of no where! lol I would like some ideas for eating that are a bit more creative!.Www@FoodAQ@Com

I got a lot of ideas!. You can slice them and toss them with a little sugar, rice wine vinegar, salt and pepper and seseme seeds!. This goes good with some sliced red onions!.!.!.!. goes great with anything!.!.!. grilled meat!.!.!.especially!.
You can also slice lengthwise and seed it out and make tuna fish as you normally would and fill it with the tuna mixture and it makes for a pretty presentation!.!.!. serve with toast slices
they are also good on top of salmon burgers!.!.!. sliced that is!.!.!. they are great in pasta salads!.!.!.I never make a tuna fish sandwich without cucumbers and dill!.!.!. makes it really good!.

JELLIED CUCUMBER RING WITH DILL DRESSING
(This is really delicious and unique!.)
2 c!. grated, pared cucumber
1/2 t!. salt
1/8 t!. white pepper
2T!. cider vinegar
3 T!. chopped pimiento
Salad greens
2 env!. unflavored gelatin
2 c!. sour cream
2 T!. lemon juice
1 T!. chopped chives or green onions
DILL DRESSING:
1 c!. mayonnaise
2 T!. light cream - Half & Half
2 T!. chopped fresh dill or 1 t!. dried dill weed
1!. In small bowl, sprinkle cucumber with salt & pepper; set aside!.
2!. In medium bowl, combine sour cream with vinegar, lemon juice, pimiento and chives!.
3!. Sprinkle gelatin over 1/2 cup cold water; let stand 5 minutes to soften!. Place over hot water; stir to dissolve completely!.
4!. Stir gelatin and cucumber into sour-cream mixture!. Turn into a slightly oiled 4-1/2 or 5 cup ring mold!.
5!. Refrigerate until firm - 3 to 4 hours!.
6!. Meanwhile, make DILL Dressing: In small bowl, using wooden spoon, beat mayonnaise, light cream and dill!.
7!. To unmold cucumber ring; Run a spatula around edges of mold to loosen!. Invert on serving platter; shake gently to release!. If necessary, place a hot, damp dishcloth over bottom of mold; shake again!.
8!. Garnish with salad greens!. Serve with Dill Dressing!.
Makes 8 servings!.

2 c!. peeled & coarsely chopped cucumbers
1/4 c!. chopped chives
3 sprigs of parsley
3 T!. soft butter
1 c!. chicken broth
1 cup light cream - Half & Half
1/4 c!. chopped celery leaves
2 T!. flour
In the container of a blender combine ingredients!. Cover the container and blend the mixture until smooth!. Season with salt and pepper!. Serve either hot or cold!.
If served hot, garnish with a very small amount of dill weed!.
If served cold, garnish with finely chopped cucumbers and a bit of grated lemon rind!.
Serves 4 to 6!.

GYRO CUCUMBER SAUCE Greek Tzatziki Yogurt Sauce for Gyro
Ingredients
8 oz!. plain yogurt (not low-fat)
1 medium cucumber
1/8 teaspoon white pepper or 1/2 teaspoon black pepper
1 teaspoon salt
1 teaspoon white sugar
2 tablespoon dill
2 peeled garlic cloves, finely minced
Juice of 1/2 lemon
Place 1 medium cut up cucumber in a chopper (peel skin, remove pulp and seeds as they are very bitter,) chop until finely chopped!. Spoon out on paper towels to soak up as much moisture as possible, place the chopped cucumber in a small bowl then stir in 2 finely minced garlic cloves, juice of ? lemon, 1 teaspoon salt, 1 teaspoon sugar, ? teaspoon black pepper, 2 tablespoon dill!. Pour off any water from the yogurt and blend in 8 oz, regular yogurt (not low fat) do not over-mix!. Cover bowl and immediately place in refrigerator and let set undisturbed for 24 hours so the ingredients will blend and sauce re-thicken (keep chilled when not in use!.)

Make cucumber sandwiches! These are so yummy! I always take them in for potlucks!

Mix these two ingredients together
Cut bread into triangles!. (I sometimes get the pumpernickel rye chips)
but spread bread with cream cheese mixture and top with a cucumber!.
DONE!

I like to slice them and add them to blanched string beans, and red onion rings, and then marinate overnight in a shallot vinegarette!. Makes a nice chilled salad!.Www@FoodAQ@Com
