Cooking help please ?!
I love cooking and i would like to cook a chocolate strawberry shortcake (Biscuits) or just a good rasberry or strawberry shortcake recipe!. But these are the ingredients i will not use
Vanilla extract, or gelatin filling nothing that has to do with alchohol or animal fattening(gelatin) or any kind of a shortening and please an easy recipe!. also Can we use semisweet chocolate bars to subsitute cocao unsweetenedWww@FoodAQ@Com

What you'll want to do is find a good recipe for a vegan biscuit (no animal fat)!. Here's one:Biscuits - Plain - -
INGREDIENTS
6 cups flour (whole wheat, white or buckwheat)
1 1/2 t salt
5 t baking powder
2 1/3 cup soy milk
1/3 cup oil
METHOD
Sift the dry ingredients into a large mixing bowl!. Make a well in the middle and add soy milk, then oil!. Stir just enough to moisten, then turn on to well floured board and knead a little!. Roll into 1/4-1/2 inch / 6-13 mm thick, depending on how high you like them!. Cut with a 2 inch / 5 cm diameter cutter - tin cans with holes cut in the bottom work good!. The bigger you cut them, the less they rise!.
Place them real close together on a cookie sheet - don't leave hardly any space between them and bake in a 450F/230C over for whole wheat, 500F/260C for white and buckwheat!. Bake 10-15 minutes, depending on your oven and look on the bottom to see if done (if they're browned good)!. You don't have to oil the pan but sometimes some margarine in the pan makes nice crusty biscuits!.
Next, here's a recipe for the strawberry sauce:
Ingredients
2 lbs ripe strawberries, hulled
1/2 cup granulated sugar (depending on sweetness of berries)
2 teaspoons cornstarch
1/2 lemon, juice of
1 pinch salt
Directions
1Combine ingredients in medium saucepan over medium-low heat; stir gently until sugar dissolves and berries are soft, about 10 minutes!.
2Remove from heat and cool!.
For the whipped cream: (since you don't want any alcoholic vanilla), you can make your own by whipping some heavy cream and adding powdered sugar!. OR If you don't want animal bi-products in your whipped topping, you can use this blogger's alternative whipped topping:
1 can unsweetened coconut cream or coconut milk
1/3 cup powdered sugar
1/4 cup soymilk powder
2 tsp vanilla powder OR
1 tbsp vanilla sugar (if used, decrease sugar slightly)
1 Put can of coconut cream/milk in fridge for 4 hours!.
2 Open can, and remove the thick part at the top!. Save the rest for other uses!.
3 Put thick coconut cream into a chilled metal bowl!.
4 With electric beaters, beat cream until thick and fluffy!.
5 Gently beat in remaining ingredients!.
6 Cover bowl, and chill for a bit!.

1 cup butter
2/3 cup heavy cream
1 egg, beaten
3 cups sliced fresh strawberries
3 tablespoons white sugar
Preheat oven to 350 degrees F (175 degrees C)!.
In a large bowl, mix flour, 1/4 cup sugar, baking powder and cream of tartar!. Cut in butter with pastry blender or two knives!. Stir in cream and egg!. Turn out onto a lightly floured surface and knead 2 minutes!. Press into a half-inch thick sheet!. Cut into squares!. Place on baking sheets!.
Bake in preheated oven 20 minutes, or until golden!. Sprinkle 3 tablespoons sugar over sliced berries!.
Let shortcakes cool before splitting and filling with sugared berries!.

Whipping cream!
And vanilla!
Deleaf the strawberries, and cut them up into little 4Th's or 8Th's!
Mix them in a big bowl with 1/2 a cup of sugar and let them sit for about 20 minutes or so!.
Take a masher and very gently squish them, this makes them more juicy!
Whip up the cream and add about 2 drops of vanilla!
To serve, break up one biscuit per person into big pieces into a bowl!. Ladle strawberries over the biscuit!. Add a dolop of whipped cream!. And we have our yummy strawberry shortcake all done!
