I love my Fish in a Bag recipe (its my own that I made up!.!.!.i tend to do that a lot!)

1 portion for each person of your fav white fish fillets (like snapper, flake etc)
Very thinly sliced red capsicum, red onion, carrot & mushrooms (1 of each veg + 250g mushrooms)
grated fresh ginger
finely chopped chilli
lemon & parsely
Sauce: 3tbls Oyster sauce & Soy Sauce, 1/2 tspn seseme oil, 1/2 tblspn lemon juice - Mixed together in a jug

Cut a 30 x 30cm sheet of baking paper & same of aluminium foil for each piece of fish!. Place baking paper on top of foil!.
Divide the sliced veg and place on each square!.
Place fish on top of veg!.
Add salt/pepper
Lay 2 thin slices of lemon, some of the chopped parsley, grated ginger & chilli on top of each fish
Pour sauce onto each portion of fish
Wrap up securely and prick a few holes with knife!.
Put on oven tray
Bake for 20 mins or until fish is tender

This is a Nepalese style to make fish!. For a kg of fish ( of your preference), marinate it with 1 tea spoon of chopped/crushed garlic and ginger, some salt, some chilly powder of your like and one whole lemon juice for 1 hour!. Meanwhile crush 2 table spoon of white mustard(Available in all Indian stores) in your mortar and pestle/grinder and make it a fine powder!. You can put little water and make it a paste!. Chop some onions, tomatoes and coriander and put aside!. In a pan with some hot oil, fry all the fish till they become golden brown!. After that, with little oil in a pan, fry chopped onions and little bit of chopped garlic/ginger, 1/2 teaspoon of tumeric powder, 1 teaspoon of cummin powder, 1/2 tea spoon of coriander powder and some salt!. Make sure to fry them properly and when the oil starts to separate, put some chopped tomatoes and cook till they are soft and tender!. Put the mustard paste/powder and mix well with the spices!. Add half cup of water on that and when it starts to boil, put the fried fish and boil further for 3/5 minutes!. Sprinkle coriander and your fish curry is ready to serve with rice/roti!. this is my favourite fish recipe:Ingredients (serves 4)
4 x 120g skinless salmon or ocean trout fillets
1/3 cup (80ml) light soy sauce
2cm piece ginger, very finely shredded
1/3 cup (80ml) sweet chilli sauce
Steamed rice, to serve
4 spring onions, thinly sliced on the diagonal
Method
Preheat the oven to 200°C!. Place fish in a shallow baking dish!. Combine soy, ginger and sweet chilli sauce, then pour over fish!.
Cover with foil and bake for 8 minutes, or until just cooked through!.
Serve fish on rice, drizzled with sauce and garnished with spring onion!.Www@FoodAQ@Com

Indian Style PAN FRIED WHOLE FISH with baby tomatoes

Ingredients:

1 medium whole firm white fish (red snapper, flounder, sea bass, bream, dorado, sole!.!.!.)
2 shallots, thinly sliced
2 large garlic cloves, finely minced
1 inch piece of ginger, peeled and finely minced
2 small Thai green chilies, finely chopped
2 cups of small baby tomatoes (red, yellow, orange!.!.!.) cut in halves
1/2 tsp turmeric
1/2 tsp ground fennel seeds
1/2 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
salt and pepper to taste
oil, vegetable or canola
1 tbsp butter, unsalted
1/2 tbsp zest of lime
1/2 tbsp zest of orange
juice of 1 lime
juice of 1 orange
pinch of sugar (if needed)
freshly chopped cilantro leaves

METHOD:

Thoroughly rinse the fish and pat dry!. With a sharp knife, carefully score the fish by making long deep diagonal incisions about 2 inches apart on both sides of the fish!. Season both sides of the fish, as well as the insides liberally with both salt and pepper!.

In a small mixing bowl, combine the shallots, ginger, garlic, chilies and the spices (turmeric, ground fennel seeds, garam masala, ground cumin and ground coriander)!. Add the lime and orange zest, lime juice and a pinch of sugar if needed!. Add 3 tbsp of oil and mix thoroughly!. Pour this marinade generously over the fish, making sure to fill the inside of the fish and the incisions as well!. Cover and let refrigerate for 30 minutes!.

Heat a large deep skillet on medium high heat with enough oil to shallow fry the fish!. When hot, very carefully slide the fish into the skillet and cook for 4-5 minutes on one side!. Gently turn the fish and cook an additional 4-5 minutes on the other side!. The fish should be golden brown and flaky!. Transfer to a serving platter!. Add any remaining marinade to the pan along with the fresh orange juice and let simmer!. Add the butter and the baby tomatoes!. Let cook for 3-4 minutes or until slightly thickened!. Pour over the whole fish and garnish with freshly chopped cilantro leaves!. Serve hot with fragrant Basmati rice and fresh rotis or naan!.Www@FoodAQ@Com

Easy TO DIE FOR Salmon--I grill it in a grill pan on the stove top!. The grill pan is a Lodge $20 cast iron pan with deep grill ridges!. I grill EVERYTHING in this when I cannot grill outside or when it's just 1-2 pieces of meat or fish!. Use salmon filets wtih skin on!. Rub skin with oil!. Lube grill pan with oil--not soaking wet--just a lubricating coating!. I squeeze lemon juice on the flesh side of salmon and sprinkle with lemon pepper seasoning and kosher salt!. I heat grill to medium-medium high and start fish skin side down!. Cood for 4-5 minutes until you see fish flesh cooked half way through the thickness!. I brush melted butter on flesh side of filet and then flip filet over to grill flesh side the rest of the way another 4-5 minutes!. Absoluetly wonderful!. I used to dislike salmon thinking it was too fishy!. This is great! The char/grill flavor with it is wonderful!. It is nothing like baking it!.Www@FoodAQ@Com

preheat oven 325 ,
soak in milk,egg batter for 3 hrs!.
place cod into italian breadcrumbs and slices of almonds to place on top!. have a baking pan with some butter on bottom and place in oven for 25 min!. at most!.

Take a favorite dressing and spread it sparingly on the filet of fish!. Cruch a few Ritz Crax and put on top, and then add some shredded cheese!. Place in a lightly oiled baking dish!. Bake about 20 minutes at 350degrees!. Tastes GREAT!!!Www@FoodAQ@Com
