I find that people try to complicate scrambled eggs way too much!. I like just a simple recipe!. Don't measure so I couldn't give you exact measurements!.
2 or 3 eggs, milk, vanilla extract, salt, and pepper, and about 1 tablespoon of water if you like fluffier eggs, top with cheese, The most complicated I will go is to saute some onions and bell peppers and top the eggs with them!.
Cook the eggs by pouring the mixture in a NON-STICK pan!. Cook it until it's solid all the way through and try to move it around as much was possible without breaking them!.Www@FoodAQ@Com

I know many people add cream, half and half, etc!., but I've found this the best way to do them:
Heat a non stick pan with a tablespoon of butter or a stainless pan with a couple of tablespoons of butter over medium heat!.
Using 2-3 eggs per person
Add 1 tablespoon of milk per person and beat with a fork
Once butter foams in the pan, while still beating with the fork, pour the mixture in the pan!.
Start stirring the eggs around with a spatula, lifting the egg curds up and flipping them over!. When then look moist but almost set, move the eggs to one side of the pan, place a couple of pieces of cheese on the empty side and then flip the eggs onto the cheese!. Take pan off heat and let it sit for a minute!. Cut into eggs with spatula to incorporate the cheese (without breaking up the curds too much) and serve!.
The cheese will be perfectly melted and blended with the eggs and they will end up being cheesy, moist and flavorful!. I finish with salt and pepper, although you can add seasonings when you are beating the eggs!.
They are delicious; I've never had a complaint and they are requested all of the time!.
P!.S!. I find that American cheese works the best; either white or yellow!. Cheeses such as cheddar or brick tend to get rubbery and don't compliment the eggs well!.Www@FoodAQ@Com
