How to make the perfect Pavlova? Please help.?!

This is an easy and delicious one to make!.
4 egg whites
1 1/4 cups white sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
2 teaspoons cornstarch
1 pint heavy cream
6 kiwi, peeled and sliced
Pre-heat oven to 300 degrees F (150 degrees C)!. Line a baking sheet with parchment paper!. Draw a 9 inch circle on the parchment paper!.
In a large bowl, beat egg whites until stiff but not dry!. Gradually add in the sugar, 1 tablespoon at a time, beating well after each addition!. Beat until thick and glossy!. Overbeaten egg whites lose volume and deflate when folded into other ingredients!. Be absolutely sure not a particle of grease or egg yolk gets into the whites!. Gently fold in vanilla extract, lemon juice and cornstarch!.
Spoon mixture inside the circle drawn on the parchment paper!. Working from the center, spread mixture toward the outside edge, building edge slightly!. This should leave a slight depression in the center!.
Bake for 1 hour!. Cool on a wire rack!.
Remove the paper, and place meringue on a flat serving plate!. Fill the center of the meringue with whipped cream, sweetened if desired!. Top whipped cream with kiwifruit slices!.
Serves 8!.

My Mother made the best Pavlova, perfect in the summer, but try not to make on a humid day, it needs dry air/

Place the egg whites in a small mixing bowl and let stand at room temperature for 30 minutes!. Meanwhile, draw a 10 inch circle on a piece of wax paper or a cut out brown paper bag and place (writing-side down) on a baking sheet!. Variation: Draw 10 four inch circles on the wax paper!.
Add vanilla and cream of tartar to egg whites!. Beat with an electric mixer until soft peaks form!. Add sugar, 1 tablespoon at a time, beating on high speed until very stiff peaks form and sugar is almost dissolved (about 5 minutes)!.
Using the back of a spoon, spread meringue onto the circle, building the sides up to form a bowl!.
Bake in a 300F oven for 35 minutes!. Turn off the oven and let shell dry in the oven, with the door closed for one hour!. Remove the shell from baking sheet and pull off wax paper!. Store in an airtight container!. Will keep indefinitely!.
Suggested fillings:
The traditional filling is simply fresh fruit and whipped cream and topped with fruit sauce!. Another good one is ice cream, nuts, fruit and sauce!. Strawberries, Kiwi and Custard is my favorite!.Www@FoodAQ@Com
